2 tbs unsalted butter (30g)
1 small diced onion (150g)
2 sticks of celery diced (100g)
3 cloves of garlic sliced (22g)
500 g diced ham
1 tbsp mixed herbs
500 g dried split green peas
4 cups chicken stock (1 litre)
4 cups vegetable stock (1 litre)
1 tsp salt
1 tsp black ground pepper
Instructions:
1.Sauté the Aromatics: Melt butter in a large pot over medium heat. Add onion, garlic, and celery, and cook until onions are softened, about 5 minutes.
2.Combine Ingredients: Stir in chicken stock, vegetable stock, dried split peas, black pepper, salt, and mixed herbs. Bring to a boil.
3.Simmer: Reduce heat to low, cover, and simmer for approximately 60 minutes, or until peas are tender and the soup has thickened.
4.Add Ham: Stir in diced ham and cook for an additional 15 minutes.
5.Blend (optional): For a smoother texture, use an immersion blender or transfer the soup to a blender and blend until desired consistency.
6.Serve: Taste and adjust seasonings as needed. Serve hot.
Tips:
For a richer flavour, use a ham bone instead of diced ham.
Add a bay leaf to the soup while simmering for extra depth of flavour.
If the soup is too thick, add additional stock.
