Rip, 4,5 years already man. Still love watching your video’s. Funny and passionate. People are disagreeiing with someone who had alot of knowledge. Just because something isnt “authentic” or mainstream doesnt mean it’s not tasty. That what is wat he was all about. Flavours, and simple food.

This is a multi-talented chef. He knows martial art ( Bruce Lee), he knows art ( Jackson Pollack ) and definitely he knows how to cook a steak creatively. To sum up, he combines the philosophy of martial art and splash painting into cooking a steak : to cook without the intention of cooking and let your intuition to freely express itself in order to achieve a masterpiece.

Great video! Me, who has been cooking steaks for 30 years, decided I would google how to cook my steak. The video was fun and gave me interesting ideas. I like the presentation: I just did the same, and found it nice to pick a slice then another slice, instead of having the whole thing in my plate. Well done, chef Josh!

Issues in first couple minutes: 1) Disses any other kind of steak cooking as inferior. 2) Uses a low smoke point oil for high heat cooking. 3) Marinates a "great ribeye" rather than letting their own natural flavor shine (why get a fucking ribeye then???) 4) Speaks from authority when there are conflicting opinions on the effectiveness of single flips vs multiple flips) More issues, but those are the simplest issues.

Yes. For a carnivore, choosing where next to cut your perfect meat to fat ratio bite is EVERYTHING lol. I've always let the steak cook w/o touching it, but I tried the turn every 20 second technique and it cooked it more evenly. It was pink from top to bottom w/o those brown lines. I also season w salt the night before.

Cutting it before serving only makes since if it's a really large cut over 20 oz. or like a Tomahawk steak because of sharing.

A most excellent presentation! Where have you been all my life? Why are you not in my kitchen creating the perfect steak for ME!? Thank you for educating in regard to the "deckle" of the ribeye! Quick question if I may: Would I get similar results with a less expensive "choice" cut ribeye with decent marbling? Is the prime cut really better? Maybe because it's place along the rib section? All that being asked, I guess I would really love to know what the best "choice" cut would be - guessing as long as the thickness is about 1 1/2 inches thick? Please respond. Thank you, Robert

Two steaks - sizzling hot pan, olive oil. One was bone in. After 2 minutes I turned them over and I could see they were not seared at all. And one was starting to curl. Was my mistake to put 2 instead of 1 steak on the pan?

What I found lacking was the process from point A to point B to point C. He talks all the while after placing the seasoned steak into the pan but doesn't specify the time he waited nor what kind (bloody, rare, medium-rare, etc.)

As a chief I oppose all you idiot's comments. You are supposed to sear the steak, which he did, at very high smoking point hotness, until both sides are seared. He did the steak right, he marinated it, I would only cook it with pepper and salt nothing more or less, pan drizzle with thyme and butter is optional. He even baked it, which I wouldnt. A great cut steak should always be served Rare.

Most table salt has iodine in it which has a metallic taste. People like you need to stop posting about things you do not understand.. Common sense would tell you to use less kosher salt. Kosher salt is one of the best salts available.

The Bruce Channel cast iron is the best. Lodge pre seasons them, too. But remember, just wipe it down with a soapy rag when you' you're done, rinse, towel dry well when you're done and then put in hot oven for 5 mins to make sure it's complelty dry. Then apply a light film of veg oil, Crisco and wipe again. This will help protect the iron from rusting and losing its seasoning. Don't soak it over 5 mins or so, if u have burnt on food or u may lose the seasoning, food will stick and the pan will rust. Lodge pans also come with a scraper that won't damage the pan. Yes. They're a little more to maintain, but will last numerous lifetimes (so long as you mantain them and don't put them in water while they're still hot-good chance it'll crack). Another thing, be careful when using metal utensils. It's usually recommented to use wooden or plastic. Not required, like in nonstick. Only recommended. If you get too rough and scratch the surface. It could cause sticking.

Definitely agree with the regular black pepper statement. Regular table black pepper is fine. Freshly cracked black pepper is overrated. I find that the finely ground table black pepper gets in the little crevices much better than the larger cracked pepper.
