Mom used to make Yorkies (we're Canadians). I always loved them, but I remember the first time I had one at a homestyle restaurant in Ottawa that served traditional roast beef dinner, as good as any at home. It was all light and high and crispy and I was like, "that the hell is this?". Moms always sunk down and were doughy and that was a Yorkshire pudding to me, lol. Mine are halfway in between. The restaurant ones were more like popovers.

Put the mixture into a jug and then pour it in the tray. It's best to keep the tray as hot as possible. From a true Yorkshire man.

Paul Mason, I was just about to say that, I have a plastic jug with quite a pointy spout and can pour the mixture quickly as it's important not to let the fat cool. For those wanting to make a dozen use 3 eggs, 1 cup flour 1 cup milk, season and whisk until the lumps have gone. The secret is, as the video explains, the batter should coat the spoon or it's too thin. Another Yorky here.

Hi. I am a Yorkshireman and this is pretty much how I cook mine. Everybody has their little differences. I have my oven really hot, as hot as it can go to heat the oil. Got to be quick pouring in the mixture. It's all about maintaining the heat. DO NOT LOSE HEAT FROM THE OVEN, OR THEY WONT RISE! If you have these with chicken then try adding some dry mixed herbs or dry thyme to the mixture to give you herby Yorkshires. Good video. Should work every time if you keep that oven door shut.

You will love them. Using any oil will work, but If you get a chance to use beef fat, like from a rib roast, it really takes them to another level. Luckily had an English mother that did the beef fat. Then she would cook english sausages, turning them in the broiler, then pouring the yorkshire batter in with the sausage grease and sausages, it was called toad in the hole. Awesome stuff.

can I just ask if you leave the mixture to rest..and is that right 180% temp?it's just that all the videos I ve seen seem to put at 200 plus.. thanks p.s your yorkies look awsome
@EasytoCookatHomeRose
@EasytoCookatHomeRose 7 лет назад
Hi Robert, Thanks for the great comments. I don't leave the mixture to rest because when the egg is added and whisked up in the mixture it creates air bubbles which I think assists the aeration of the mixture. In regard to the oven, yes I use 180% temperature I think the only way I can explain it. It is a little like a car some drive better than others and I find 180 for my oven is perfect. I guess trial is the only way of finding out . if I put mine at above 180 they would burn. Happy yorkies making ;)

Excellent video. I want to make these for the first time this Christmas Eve. I wouldn't mind preparing them in advance, however. How do you reheat them from frozen and how do they compare to freshly baked?
@EasytoCookatHomeRose
@EasytoCookatHomeRose 6 лет назад
Hi Tim for sure you can prepare this in advance if you freeze them once they have cooled and place on a flat tray to go in the freezer. once frozen about 8 hours they can be put into a Tupperware box and you are good to go. On the day of eating takeout frozen and straight into a hot oven and they should come out crisp and yummy around 10 mins in the oven. The fresh or frozen should be about the same frozen is just easier on the day with everything else to prep. Hope this helps do let me know how you get on and thanks for watching :)

@@EasytoCookatHomeRose - Ouch! Much sympathy for you getting healed from a broken collar bone. That happened to my mom too... she always wore a scarf around her neck after it healed, because it was not even put back into its proper place. I sincerely hope your heals better. I will be back to watch more. This one caught my eye because I love yorkshire pudding, but not feasible to make a large one for just my husband and me. Sending caring, healing thoughts your way.
