I always just used the box cheese grater...On the heavy shred side? It's called, I think... Almost like a hashbrown cut. Pancakes had more body that way it seemed. We used applesauce too.

I am so glad I found this channel! My Grandmother immigrated from Warsaw in the 1920's as a child to Chicago. Chicago had (and still has) a huge Polish community especially the northwest side of the city. I spent most of my early childhood living with my grandparents (my parents both worked) and grew up on Polish cuisine. I've been searching for real Polish dishes for years that really bring Poland into my kitchen and your channel fits the bill! More please...more! Thanks

Great recipe! I hated these growing up, I thought we used sugar to tolerate them, lol - now I luv them! Made some last night using leftover mashed potatoes, delicious!!!

Sounds similar to my story. My Bobcha and her siostra came from a farm in Poland when they were young and moved to Chicago. The rest of the family stayed behind to take care of the farm. After a while the brothers started to move to Chicago as well. After she married my grandfather, who is Scottish, they had 2 boys and ended up moving to the Milwaukee area for my grandfathers work. But my grandma made a lot of traditional Polish recipes. I especially liked the pastries but she could cook anything and was a great cook. My aunt as well was Polish and they both made excellent Polish food. I still have cousin's in Poland and my Dad took my girls to visit them, they had a very nice visit. Glad I found this page. Thank you.

My sister and I talk about these to this day and we're in our 30s and 40s. We would ALWAYS ask for our mother to make them. Sometimes she would surprise us... she would start cooking them while we were upstairs and we would get that one scent of fried potato and we would stop playing and run downstairs. My babci would have some more fried onion on the side.. and sour cream..thats how I do it! Thank u for this! ❤

If I may ask, are you Polish-American then? If so, do you perhaps know if there are any Polish communities still keeping Polish traditions alive there? Like maybe there are some Polish cultural centres, cooking gatherings, schools with Polish as the language of instruction, etc.?

The memories these pancakes bring!!! Growing up Polish & Catholic, potato pancakes were always one of many meatless Friday suppers at our house. Interestingly, my mother always served them with applesauce! Slathering your pancake in the applesauce is delicious! One time, my grandmother had a few leftover pancakes stacked on the stove & one of the neighborhood boys took a few & put them in his shirt pocket for later!!! 🤣🤣

My mom taught me how to make potato pancakes. I always grate them as I like the texture when they are finished and a little hard work manually grating them doesn’t hurt anyone. Add grated onion, some egg and flour. Season to taste. Using this same recipe you can turn it into potato pie. I fry up pork belly bacon and cut them into small cubes. Add this to the mixture of potatoes you made earlier. Pour into a greased glass baking dish. Cook for approximately 1 hour at 350F. Serve with sour cream.

My family immigrated from Poland to America when I was 3yrs old in 1982. My Mother was as old school as it gets but, when we finally were able to afford luxuries like a blender my Mother never grated the potatoes by hand again. I do remember her telling my Sister to take care not to over blend them. Absolutely delicious served with a cup of buttermilk on the side. Thank you for making this video.

Made these tonight and the whole family loved them! I have been reluctant to make these in the past because of all the work I watched my grandma put into shredding the potatoes. Blender...who would have thought 😂

Very interesting version of potato pancakes. I always used grater and also added some cheese and garlic. In Latvia we eat potato pancakes as a main course, mostly with sour cream , without sugar or any other sweet sauce or ingredient. I like to cook mushroom sour cream sauce with potato pancakes.

Awesome! Pretty much spot on recipe from my mother who is 2nd generation American but 100% Polish! Sour cream and Applesauce was our condiments growing up! And you are so right with not messing with perfection! Simple yet amazing flavor!

In my hometown (USA) the churches hold little street festivals on summer weekends. Every one of them makes and sells these but we call them "bleenies". Whole neighborhoods smell wonderful from the fryers and people stand in line for them for a long time, buying dozens at a time. I like the texture of the box grater cut but love the ease of the blender. My Granny also said,"You look, you'll know!"

It's great to see these videos. My Polish grandmother had a diabetic shock when I was about a year old and she lost all her English and wasn't able to cook anymore. I only heard about her wonderful cooking, never got to taste it. I make things sometimes but, it's only my idea of what it should be like. I have no frame of reference. So, it's good to be able to watch as you cook it. Thanks!!

I’m 26 and potato pancakes were my all time favorite food my grandma made. (Whenever I asked she would make it lol, just how polish grandmas can be) and she had the processor and I’d watch her make them. So nostalgic. I didn’t know the polish word for potato pancakes (idk why cuz I know Pierogi and kapusta and golabki…etc…) My grandparents didn’t teach my mom and her sisters Polish so they could talk to each other in secret😂(apparently, my mom and her sisters were enrolled in Polish school as children and they all failed hahaha) wish I knew more polish but these things are seriously SO good. It’s not like hash browns bc of the egg and onions mixed in. My grandma passed and I have the recipe but watching someone make them is super helpful :) thank you!!!💕

I think you are a treasure! I so appreciate your sharing this with us! I used to watch my Grammom make sooooo many tasty delights in the kitchen, and, yes, she never wrote them down and would use very vague language on how to make anything like "Look". My mother used to make these on Fridays, as you said, for a meatless meal. Usually, they were paired with Tomato Soup. Your recipe is the exact same as she used to make, only, being old school, she would grate the onions and potatoes on a box grater. I use my food processor and it works wonderfully. I have your new cookbook and love trying all the recipes.

If you have a kitchen aid mixer. There is an attachment for a grater. Comes with 3 ways to cut.

We kids were so excited when mama would make placki; she made it sound like it was so special. The reality was that we were poor but had plenty of potatoes and onions in the cellar and lard in the pantry. The lard wasn't a problem because we ate them so fast off the frying pan than the lard never had a chance to congeal. Did not know that you could have sour cream or applesauce until I was in my 20s.

Potatoe pancakes...my Dad would make these on a Friday evening and we would stand in line by the sugar bowl with our plates in hand...he couldn't make them fast enough. He used solid Cisco and no onion. They were heaven!

I cook a very similar dish but I do it old school with a grater. The main difference is that I try to keep the water content very low so I grate the potatoes separately and squeeze out the water with a clean teatowel. That enables keeping tge flour content low. I fry them in butter and eat them plain...

Hi Anna, both my parents are from Poland. My dad didn't really cook any Polish food.... except for these!! We would top them with bacon bits and drizzle a little bit of honey on them also. If you haven't had them like that , I urge you to at least try it. Let me know how you like them!!

So glad you give measurements. Babcia has a certain spoon and a certain cup that she uses, both old as Moses and of non standard size. She “knows” how full/how many cups and spoons should be for each recipe. (None written down of course) If you ask her how much, how long, it always “I don’t know. Until it’s enough.” Or “until it looks/feels/tastes right” We have cracked a few of the recipes but your channel is helping us get baseline measurements and we can adjust until it looks/feels/tastes right. When I was a boy growing up, my Mom and Busia would hand grate the potatoes and mix in some fine chopped onion. Then they would serve them with applesauce. Basically the same recipe as yours.

My Grandmother made these, my mother made them, I make them too. Unless I am making a lot I still use the grater which is most of the time because my wife is diabetic and can only have one small one. We eat them with sour cream, no sugar. Occasionally grandma served the rolled up and stuffed with cottage cheese and green onions or chives from her garden. Sometimes we had them at breakfast with eggs and kaszanka but most of the time they were eaten on Friday dinner with fried perch or walleye or śledzę and barszcz. Pyszny!

I hunger for my childhood when our church every summer would have a huge picnic fund raiser behind the church for three days the weekend of the 4th of July and the polish ladies made the most delicious Blinies and I would eat ten at a time. Since the separation of the church’s they have consolidated and the people that made them the right way are all but gone and the new ladies just don’t make them the same. They had a old machine that would grade them (not as minced as you make yours) but with same ingredients and they were fried in about a quarter inch of lard over these giant gas heated flat stoves that were designed just for them under a pavilion. Those days were so wonderful and I have great memories of them. They also made stuffed cabbage and other Polish foods including Hulaski , Kabasa, which I did not care for the Blini’s were my favorite they also made homemade pierogies that were to die for.

I tried this recipe both ways, grating by hand and using blender and you’re right blender much easier, przepraszam babciu! Turned out great both ways!

Too much water results in a soupy batter. The grate should not be coarse, but it should not be mushy, either. If you use this method, drain in a sieve to get out as much water as possible. Allow the water to sit so the starch sinks to the bottom. Drain the water, then add the starch back to the potato/onion mixture before adding flour. You will get a much crisper pancake.

Love your videos😁. My mum would put the potatoes through the meat grinder so they had a little more texture than the blending would. But great idea!! Haven’t made them in years. Feel the need to after watching you😋👍

Oh.......sour cream and sugar or sometimes apple sauce, that's what I remember most when my mother made them. I really like the idea of blending everything together and will try it myself, this old guy loves to cook and those look delicious. Thank you!

Never thought of blending them. Looks so much easier. I have a shredding attachment to my food processor which works but is laborious. And what a pain to clean afterwards. They take longer to cook. so I’m going to try this recipe tonight

Glad to see you're doing videos. Thank you. As a young married woman starting out to cook, my grandmother was making pierogi and I wanted to write down the recipe. She also never measured anything - it went by "eye". When I asked her how much flour to put in, her reply was "As much is will fit"!! She came from a small town north of Warsaw. Now, we will probably have potato pancakes either tonight or tomorrow night for supper. My husband likes them with syrup, I'm applesauce! Can't wait for more videos!!

I grew up with potato pancakes. My Mom had the magic touch! In the process of raising a family, I forgot the recipe and had been experimenting trying to find the long, lost secret. Then I found you! Thank you for the recipe!

Loved these as a child. Always had them with sugar. Recently tried them with sour cream, Yumm! Been tring to get them like my mom used to make, but still can't get it right. My son loves the ones I don't think come out right, just like my nalesniki,

This takes me back to my childhood in upstate NY. Both of my Grandmas (Babus) would compete for the attention of their grandchildren, with their cooking, . Being so close to Vermont, they often blended cream cheese and maple syrup for the placki topping. If we behaved they would sprinkle cinnamon on top. I rarely got cinnamon! Now that I live in Chicago, I'm grateful for the restaurants and delis (and now...you) for the memories of warm kitchen smells, all the laughter and way too many pinched cheeks. Thank You!

Looks good, I just got done making a batch with 5 yellow potato’s and a large white onion. I went with the old school way with the grater. I grew up with plockis. My pop pop taught me to do egg and flour and even with some bacon lol. I haven’t made them in a few years but the outcome was amazing.

Recently discovered your channel and am enjoying watching your cooking. Regarding these potato pancakes. Like many others I have been making them since I was a child and my children and grandchildren enjoy them as well. And yes, I used the fine grater which removed the skin off my fingers. Now I use the food processor. Never thought of using the blender. I was told to add a bit of butter to the oil as it made the pancakes more crispy. Noticed that you have them with sugar. We had them on their own for lunch sometimes served with either butter or whipped cream (no sugar), depending on who preferred which. We never used sour cream with anything when I was growing up which is surprising as it is used so often in Polish cooking. I still don't use it. Using to have a Dutch boyfriend and whenever I had dinner with his family, his grandmother (who lived with them) would make potato pancakes which would be served in place of boiled or mashed potato.

I can remember making these with my Dad when I was 4 years old. (Old school grater, but really not necessary). You gave me an idea to try other versions! Cauliflower with onion, maybe zuchini! With a touch of Krakow Seasoning (salt, black and white pepper, sugar, coriander, garlic, mustard, marjoram, mace and savory.). Buy on Ebay or Penzy on line.

I still make these, our grandkids love them. We mince the potato's and onions on a coarse setting and they go into a fine sieve to drain the excess liquid. Stir in an egg and fry in butter. My Oma sometimes put chopped speck in too. Oma's recipe was equal weight potato and onion. She'd use the potato liquid in an eintopf or casserole.

This is the way Babcia prepared them back in the '50's and '60's. We also had them on Friday's being a day of Abstinence. We covered them with sour cream, applesauce or catsup. Mmm... good!
