Tenderloin 6 weeks dried in the refrigerator. I made it during the greatest summer heat. Classic drying or maturing was impossible. Too hot and too many insects. So I decided to try a method that I knew was possible, but I hadn't done it myself before.
You have to experiment and gain experience - this is one of my motto in life. This time the attempt was successful and gave an excellent effect. Please watch the movie.
