These Fish Cakes will vanish as soon as they are fried. Yes, you can indeed do magic! Just eyeball the quantities and turn a bunch of veggies and a can of fish into a delicious snack to enjoy any time.
Fish Cakes Recipe by Aasai Rasai
Ingredients:
1 Can Jack or Chub Mackerel
1 Can Chickpeas
1 cup frozen Cauliflower florets
1 cup frozen Bell Peppers with Onions
3/4 cup Green Peas
Oil for shallow frying
1 tablespoon Corn Starch
1 tablespoon Mayonnaise
2 teaspoons ground Black Pepper
2 Eggs (lightly beaten)
1 cup breadcrumbs for mixture (more as needed)
More breadcrumbs for coating
Salt as desired
Method:
Pulse the frozen veggies in the blender until coarsely minced.
Drain off and discard the liquid in the canned fish and canned chickpeas.
De-bone the fish and mince by hand or in a food processor.
Pulse the chickpeas in blender until coarsely minced.
In a bowl Mix all the ingredients together.
Shape into balls and flatten.
Coat in breadcrumbs.
Shallow fry until golden brown. Enjoy!
