Handi Kevum and Pethi Kevum both refer to the same Kevum. Kevum is called Oil Cakes and is enjoyed during traditional ceremonies, festivals and celebrations.
This is the easiest way to make Kevum quickly when time is not on your side. This recipe uses Jaggery and Milk. Coconut milk or dairy milk both work great.
Handi Kevum made with Jaggery & Milk
Recipe by Aasai Rasai (Makes 15-20 Kevums)
Ingredients:
200g Jaggery + 2 oz water = treacle/syrup.
3/4 cup rice flour
1/4 cup plain flour (all purpose flour)
A little less than 1/4 teaspoon salt (optional)
1 Tablespoon Fennel Seeds (or as desired)
1/3 cup coconut milk or Half & Half
2 oz water
*Reserve about 1 or 2 tablespoons of flour to use if needed.
Method:
1.Place Jaggery and 2 oz water in a pan. Boil until thickened like a syrup. Take off heat and set aside to cool down.
2. In a bowl, mix all the dry and wet ingredients together, except Fennel Seeds. Batter should pour in a continuous steady stream. It should not be too thick or too thin.
Rest the batter for 30 minutes.
3. Heat oil until hot but not smoking hot. Maintain heat at medium-high setting.
4. Add fennel seeds just before frying
4. Pour 2-3 tablespoons batter into hot oil. Kavum will float to the top. Turn it over and fry for a few seconds. Press down the Kavum and release. When it it turns brown remove from the oil and drain.
5. Keeps well for weeks at room temperature. Can be warmed up in the microwave or steamer before serving.
