Replacing Potatoes on a Keto Diet - Part One - The Taste Tests

This is just the first part of a series (likely 6-8 videos) where I will be looking at various replacements for potatoes in a ketogenic diet. This first part is a series of taste tests that gave me an idea of what some of these vegetables would be good for and which ones I'm not even going to bother with. You're welcome to run with any of the ideas I've proposed in this video, or you can wait as I continue to experiment and release the rest of the videos in this series.
In this video, I test celeriac, diakon radish, kohlrabi, rutabega, turnip, jicama, and (to a lesser extent) zucchini. I try them raw, French fried in tallow, and dehydrated into chips. What I learned is going to put a lot of "potato" dishes back on the menu, starting with corned beef hash (which will be next video in this series).

Paula -- it's cuz he ate the piece next to the fibrous peel which was in the dirt -- he was right because the interior is often quite sweet and crispy. My favorite!

I have tried Jicama for savory dishes but am not a fan of the natural sweetness. What I do love Jicama for is a faux apple cobbler! that is a 100% winner

@@MeiaLuaDeCompasso and even after pressure cooking thin pieces in the instapot it is still rather "fibrousy" I usually take 1/3 of it add my flavoring, sweetener, cinnamon, and lemon juice and blend it into an "apple sauce" then mix it all back together. Works great for allowing the filling to maintain shape after you cut into it.

I made an "Apple" Cranberry Crisp for Thanksgiving this year using Chayote Squash! Even my sister who doesn't do Keto liked it and thought it was apples!

I used to buy the largest russets I could find for baked potatoes or mashed. I really miss potatoes, even much more than white sugar.

This was great, I've been looking for "are parsnips good for you?" for a while now, and I think this has helped. Ever heard of - Eeycarlott Incredible Expediency - (search on google ) ? It is a great one of a kind guide for discovering how to get the amazing looking body that you desire minus the headache. Ive heard some incredible things about it and my work buddy got amazing success with it.

I love to use regular red radishes for a "potato" puree. I roast them to a golden brown and put them in my ninja mini with some butter and salt and it is very yummy.

I try these like home fries. And I’ve made potato salad with them. My husband loves them. It’s best to steam them for a while first.

I use radishes all the time with roasts, I really like them. Keto Liscious has a chaffle recipe where she uses the radishes (boiled) in her chaffel. Cut them up and they take the need away for fries. Radishes for the win!!!/Kathy

Hearts of palm makes pretty good mash! Or you could try the ‘faux mash potatoes’ recipe made of egg whites- Its a bit tricky to make but it’s very good and you can make a big batch and freeze it in portions. Sadly I’m sensitive to egg whites ( albumen) so not the solution for me.

Let me tell you. I just finished some Kohlrabi and it was AMAZING. I found it spiralized at Walmart ( never heard if it before this video) I bought it and friend it up with some onions and garlic. And WOW 🤩 it tasted like hash browns. I’m sooo excited. Thanks for this video 😄

Growing up my Dad grew Kohlrabi in his garden and I loved it. But it had a very much cabbage stalk flavor. I can't imagine it would be a good substitute for potatoes. But then I have never had it cooked because we ate it raw.

Jicama has been my longtime favorite for making fries in my air fryer. I just drizzle down with a little avocado oil and sprinkle and some seasonings and toss them in a bowl. Then I air fry them. They turn out great! They are a little crunchy in the middle still so if that would bother somebody and you want them to be softer than you would probably just have to air fry them longer. I love them! Thanks for doing this video Steve. I can't wait to watch more!🤩

Shirley, you have piqued my interest. What temp setting do you use and how long do you fry them? I tried grating the jicama for hash browns, seasoned and tossed them in oil but all I got was burnt jicama. I tried lowering temp and cooking longer, I tried raising temp and cooking for a shorter period but ran out of jicama before I could get it edible.

I got the idea after the crunchy goodness of the dehydrated jicama chips that I might be able to make a tortilla chip out them. I soaked them overnight in a brine of water and OOOFlavors corn extract, along with a little taco seasoning then dehydrated them. The flavor was awful. Also, there's a huge amount of shrinkage when you dehydrate, such that a jicama only yields about 9-10 "chips". It may not be economical for me to continue that experiment.

What a great idea. So sad that it didn't pan out. If I had time, that would be my ultimate quest. I am a chips and salsa girl from way back and miss that so much (not enough to cheat) but a wistful longing for homemade tortilla chips. Thank you for your continuing efforts on this front. I am definitely coming back for the corn beef hash idea. I roasted radishes and diced them into cubes but it just didn't turn out right when I sauteed them into the corned beef. Very lack luster. I hope yours will be the breakthrough I'm looking for.

I love chips and salsa and have even tried making them with the corn extract. They're so so until they get wet then yuk slimy taste. I hope you can make a great chip and for now I bake or fry low carb flour tortillas. They're pretty good but not the same as corn :(

My favorite potato substitute is using a rutabaga for mashed potatoes. Cut one up in very small pieces and boil in salted water until very fork-tender, mash with lots of good butter and half and half, add cracked black pepper, spoon into baking dish and run in hot oven until crusty on top. so delicious!!!! keto friendly.

I also love rutabaga (which is a cousin to turnips). My favorite potato substitute is still cauliflower, mashed with salt, pepper, onion powder, garlic powder, and a dash of sour cream. I honestly can't taste the difference between cauliflower and potatoes, but that might be because my tastebuds were shot off during the war (not really).

Thanks so much for this! Two things I find interesting: I also kickstarted my weight loss journey with 2 wks of potatoes and felt the same way about them at the end... And we sometimes give our leftovers to the wild "critters" who visit our property regularly, and the only foods that are routinely untouched are potatoes!

Corned beef hash used to be a mainstay. I tried it with red radishes but wasn't thrilled enough to make it again. It's been 3 years for me...my face is fixed for tomorrow's recipe. I'm dragging my dehydrator out of the garage too. lol You are so inspiring!

Low Carb Inspirations has a good jicama hash brown chaffle.....I think you could probably come up with one that would make it a GREAT chaffle! I love jicama ......I usually have some fresh cut in my fridge for snacking! Love radishes, but have never tried daikon. But now I have to! Thank you very much for all your experimenting!! I know I can try any one of your recipes and it will not be a waste of pantry supplies 👍

I trust your taste tests because, l like you, I am a super-taster. My family loves almost everything that I try out that I just can't eat because of the flavor. It is so disappointing to see everyone else really like stuff when I don't. I haven't yet found any dessert that I can stand even though I have at least 8 different sweeteners (allulose is the best for me so far). Thanks for your videos!!!!

Thanks for sharing! I love jicama! It’s prebiotic. Whole foods has wraps in the produce department. The flavor is great! Fresh and crispy. I deep fry and use the air fryer when making the fries. Write a cookbook and how to book.

I love celeriac chips but I do them in the oven on a baking sheet sprinkled with olive oil (not too much) and pink salt. I bake a fillet of white fish in foil at the same time and make a keto cheese sauce ❤️❤️❤️❤️🇬🇧

On the other hand, pureed celery root is completely wonderful. A bit of a pain to prep, but we serve it at very high-end dinners and everyone loves it.

I use turnip to make my Cuban creole ground beef recipe and it is absolutely yummy ! I don’t miss the potato!

I make potato salad with daikon radish I cube them then boil when taken out of water mix mustard and pickle juice let cool add egg and mayo yum.P.S love your channel

Love jicama fries, BUT they don't love me. Got severe stomach ache every time I've tried jicama. Currently use regular red radishes in soups and stews. Never tried kohlrabi. Sounds like a winner. Thank you Steve. Love your videos!

Thanks. My current mission is to create a "potato" chip, and I constantly feel like I'm just one more trial away from getting it. The bad news (for you) is that the best success I've had with making a chip is with jicama. Sorry...

I am trying to think where I can find some Jicama on Sunday. This is hard for me because I am just now learning of it's existence. Don't think I've even seen it anywhere in 30 years I've done the shopping and cooking. I am subscribed and the bell has been clicked because I am interested in seeing more such videos. Been KETO two months now and would love a potato.
