Whole milk- 4.25 cups (1 l)
Butter - 4 tbsp (50 g)
Egg Yolks - 2
Parmigiano Reggiano - 8 tbsp (50 g); finely grated
Nutmeg - to taste
Salt - to taste
Topping Options
Butter - 4 tbsp (50 g); melted butter
Parmigiano or Pecorino cheese - 8 tbsp (50 g); finely grated
Sage - 4-5 fresh leaves
Gorgonzola cheese - as needed to top (about 1.8 oz or 50 g)
