蝦仁 Prawns-8片
白身魚 White meat fish-1條
鹽巴&黑胡椒 Salt & Black pepper-適量
紅&黃甜椒 Red&Yellow pepper-各1/2個
青龍椒 Green chili pepper-5支
生辣椒 Chili pepper-1支
洋蔥 Onion-1/4個
蒜頭 Garlic-3粒
咖哩粉 Curry powder-2大匙
麵粉 Flour-10g
雞高湯 Chicken stock-150cc
椰汁 Coconut milk-200cc
味淋 Mirin-2大匙
醬油 Soy sauce-1大匙
長米 Long grain rice-150g
黃薑粉 Turmeric-1小匙
奶油 Butter-2小匙
月桂葉 Bay leaf-1張
香菜 Cilantro [1~2人份]
Preparation
(1) 1/2 of red bell pepper, remove the core and cut into small pieces
(2) 1/2 of yellow bell pepper, remove the core and cut into small pieces
(3) 5 green chili peppers, remove the calyces and cut into pieces diagonally
(4) 1/4 onion, cut into small dices
(5) 3 cloves of garlic, chop into small pieces
(6) 1 chili pepper, remove the calyx, cut into pieces diagonally
(7) 1 white meat fish filet, cut into bigger pieces
Instruction
(1) Add 10g of butter
(2) Put to medium heat
(3) Add 150g of Jamine rice (rinsed and drained) and mix it with butter
(4) Add 1 tsp of turmeric powder, mix them well
(5) Add 150cc of water
(6) 1 leaf of bay leaf
(7) Turn to low heat and cook for 8 minutes
(8) Turn to high heat and cook for 1 minute
(9) Shut off the stove
(10) Let it sit for 10 minutes
(11) Prepare another frying pan, add 1 tsp of oil
(12) Add fish pieces and season them with salt & pepper
(13) Fry until golden brown at both sides and take them out
(14) Add 10 prawns and season them with salt & pepper
(15) Fry until turning red at both sides and take them out
(16) Add onion, garlic and chili, fry until translucent
(17) Add red, yellow, green pepper
(18) Add 2 tbsp of curry powder and fry until aromatic
(19) Add 15g of flour and stir-fry all ingredients well
(20) Shut of the stove
(21) Add 150cc of chicken stock, mix them well
(22) Put to medium heat
(23) Add 200cc of coconut milk
(24) Add 2 tbsp of mirin
(25) Add 1 tbsp of soy sauce
(26) Put cooked seafood back in the pan
(27) Turn back to the rice and take out the bay leaf
(28) Plating
(29) Sprinkle some cilantro on top
