Simple Cooking: Vegetable Pancakes (vegetable fritters) 

Hi everyone, today's simple cooking recipe is vegetable pancakes.

Vegetable Pancakes
Red chili
Spring onion
Carrot
Zucchini
Steamed Edamame
We can use any vegetables we have
Batter mix:
50g plain flour
20g rice flour
1 tsp baking powder
Salt & pepper to taste
About 5 to 6 tbsp of cold water
Oil for frying
Prepare the vegetables you are using
Add the batter mix to mix well.
Add cold water one tablespoon at a time while stirring.
The water use depends on the type of vegetable you are using.
The consistency of the batter shouldn't be too thin or too thick.
Fry until both sides are golden brown.
I use a non-stick pan with a little oil.
