Had to repair my old beater as it was getting "chippy". Today the pro 120 wasnt all up to the task, but the atoma 140 stepped in. Good progression and stopped at the shapton pro 5k.
Shapton pro`s are great splash and go stones, especially at the lower grits. I love the 320 in particular.

Great vid for morning coffee. Thanks !!!! The Shapton Pro 220 is a pretty decent low grit stone. Much more like a lower grit 320 in operation than the 120, which as you point out needs conditioning etc to work decently. And the 5K? Whats up with that. The 220, 320, 1K, 1.5K, 2K all feel interesting in their own ways. The 5K has few redeeming features. Hard, not a lot of feedback, and on harder steels, pretty slow.

I went out and bought a a massive 2 .25" thick 24"x18" (about 60x45 cm) end grain maple board. Puts legs on it. Set it as a permanent fixture on the kitchen counter right where most of the prep is done. It looks great. It feels very pleasing to cut on. Yet mine still insists on cutting her breakfast fruits and things with the knife on a plate, ding cling clang with each cut.

Nice work ! Appreciate 100% you being real about your weak side showing uneven I have the same thing I am working on. 320 shapton also is my favorite for light repairs then that 1000 then the Rika 5k !

It's interesting to see again that the 120 is not up to the task. I already ordered it a while back to thin out one my knives with a quite resistant cladding. After watching some more vids on the 120 I got the Suehiro LD 180 instead. I'm happy I did. You recommended the LD over the 120 to me in a comment as well and I'm really grateful for that.

Thats good to hear. its not that the 120 is not fast, its just kinda "lifeless" i just cant get myself to enjoy the feedback on it. Unlike the LD 21 180# wich i could work on for days :)

@@lofotenknifeworks2278 What a pity all my knives are thinned atm. And all my friends knives are done as well 😁 Some reviews of the sp 120 mention that it will f up the Atoma and will have to be flattened with sic powder. What's your experience there?

Nice video! Maybe I'll try some shaptons myself at some point, I also like the looks of the M15 and M24. I hope you don't mind another question: I'm looking at the atoma 140, mainly for flattening my stones. Do you use yours to flatten the finer grit stones, say 3k,5k,8k,10k, as well? Or would you recommend to get an atoma 400,600,1200 (which?) for this purpose? Yesterday I used my naniwa pro 600, 2k, 5k for the first time. I was super stoked by the feeling the 2k was giving me. I think it differs quite a lot from the 800 or the 3k, it's a little softer and the feeling is oh so creamy and buttery. Don't have the 1k, but out of all the rest of the naniwa pro series, in terms of feeling and feedback, I think the 2k really stands out.

Hi, subscribed from Brazil here. Which stone do you recommend after a 1000 kuromaku shapton? suehiro ouka 3000, naniwa superstone 3000 or kuromaku 5000?

Pelas pesquisas que fiz eu iria de ouka 3000, resultados muito próximos da naniwa pro/chosera 3000.

I'm new in hand sharpening, until now I only used a cheap old 1000/3000 water stone. Now I wanna buy a Shapton and some extra fine Diamant stone. Today somebody told me you shouldn't use a diamond after ceramic stone (Shapton 1000) stone is it really true you really shouldn't do this? Thanks for your help!

Diamond stones are often coarse and ment for removing alot of metal. But I bet you could find finer ones if you search. In diamond stones in general you end up using the same abrasive particles over and over and in turn you will start to wear them out. In other stones you end up removing parts of the stone while you sharpen. This exposes new abrasive particles, and in turn keep the stone cutting faster and better for longer. So while im not too familiar with diamond stones i would say that the advice you got was good. I would also look for a different finishing stone. Maybe a naniwa pro/chosera 3k for carbon or suehiro ouka 3k for stainless steel :)

Hi new subscriber here! I really like your videos but most of all the speed of your sharpening amazing. Im pretty decent when it comes to sharp my kitchen knifes. I have an atoma diamond 400, a cerax 1000 and a shapton 2000. I am planning on buying a diamond plate but there is almost no info about it. Can you make a review on diamond plates in the us market please? I am from argentina and here stones and plates are super expensive not to mention almost imposible to get in the local market. Im looking for a plate that can simulate the edge of a 2000 grit stone but much faster. I only can buy one! So if you tell me which one is the best or if there isnt i will very much appreciate it. I need this because im looking for a diamond plate that can last forever, super fast and very good edges on knives overall. Thank you!!

I might not be able to give as good advice is i wish i could. My only diamond plate is an atoma 140. Its a bit worn, but that makes it perfect for finer grits as well as lower grits :) If you check out my latest vid (ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-Els9U8uuHDA.html) around 13:20 you will se me using the plate :)
