I love caramel and peanuts together sooo much, I probably would put a layer of peanuts and caramel between the ice cream and the cake in addition to the one on the top. Snickers ice cream is the bomb. Thanks for the idea, Laura! x

Ice cream cakes are my favorite but what I would do I would soak the cake in some chocolate cyrup or any liquid to make it moist and when it freezes it becomes really good.
