You know it, you love it, you probably never make it at home, it’s: FRIED CHICKEN. Specifically, spicy fried chicken, and if you want to take it there: a Spicy Fried Chicken Sandwich. Thanks to a little cornstarch in the coating and a very good dredging technique, the outside of the chicken is unbelievably crispy, while thanks to a good brining of buttermilk and pickle juice, the inside is juicy, salty and perfect. While sandwiches are decidedly NOT MY BAG, I will say this one, made with shredded lettuce, raw onion, and pickled peppers does absolutely do it for me.

Miss Roman- another secret I have recently found out about, that I find actually gets even crispier results than cornstarch, is sweet potato starch. I literally use it all the time now in place of cs. #protip :-)

Grove and Alison Roman is as much of a PERFECT PAIRING as fried chicken and pickles. I used to live in Korea and spicy fried chicken is always served with pickled radishes (and beer) :-) I'm soooo here for this sandwich

Great recipe! Worth remembering that the cornstarch to all-purpose flour ratio described in the video is, coincidentally, the recipe for cake flour substitute; you can just use cake flour if you've got it on hand. :)

David you aren't alone, I don't like close ups of myself on the internet and I have to tell people not to post them, or I go way out of my way not to be in them in the first place. My employers over the years always insist on doing "yearbooks" with everyone's picture and its always a weird conversation when I tell them I wish to be excluded.
