This video has been requested so many times already that I lose count so it is time to make it happen. Today we are reviewing all the different steak tenderizing methods that exist out there to find out the myths, the fakes, and the reals. We have 4 different experiments to run today as we will review all the steak tenderizing methods and select the best of it! Tenderizers can be divided into 4 different types, chemical tenderizers, acidic tenderizers, mechanical tenderizers, and salt Tenderizing and in this video we will experiment with all of them.

Hey Ninja, I've heard that sparkling water like Perrier or even normal seltzer can tenderize well. It's also not too expensive and I don't feel bad about wasting a pineapple or papaya.

Hey ninja there is a lot of papain in the skin of papaya, so you can add that into your puree or just use the skins for tenderizing and eat the fruit. You can also buy papain extract in powder form. Could you do a comparison of different delivery method of papain? Side note if you ever want to use fruit skins for food you should buy organic.

I am curious if you can combine tenderizing techniques with salt brining. Something like tenderizing the meat first, then wash off the tenderizing stuff then dry brine the steak.

Dear Mr. Ninja.... ( If that is indeed your real name ), I was glad to see you had a number D finally, my long time favorite. Thank you for this video. I tried using lime juice on a tough cut overnight and the steak fell apart before I could get it on the grill.

I like using the needler with London broil and it helps a lot. I never tried the the other methods. But the needler does an ok job for a really tough cut. The cuts you chose already had a fair amount of marbling.

Those were ok steaks and the only thing I don't like about the needler is the problem with the bacteria propagation... Try papaya next time and let me kow! 😀😀

@@SaltyTales I want to try the papaya, but I don't get jammed up with the needler. I never got sick from it and I had stomach surgery years ago. You could always sanitize it with a dilute bleach solution. But they are a pain in the cajones to clean.... Papayas remind me of going to Hawaii on my honeymoon, where the fruit every morning was outrageous back in '83. God bless you and Mrs Ninja.

This papaya is an interesting idea... I have previously tried pineapple on cheaper cuts of meat to make them tender and found at 2 hours it was disentegrating and then left a funny film in my mouth. Thank you for the new idea.

I knew the papaya trick would work best for tenderness, but I'll do you one better. Eat the papaya fruit, but put the skin and seeds through the blender with a bit of water and use that instead as a tenderizer. It works the same, you get to enjoy the fruit, and you utilize the rest of what normally goes in the garbage! :D

@@SaltyTales Yes papaya is delicious in all sorts of uses. I tried to make mango lassi recently, didn't have any mangos at the store, so I used some papaya and it was fantastic!

What if you used papaya, rinse it off after an hour, cover with salt and let it sit for another hour or so? BTW, I never knew salt works as a tenderizer. Did you rinse it all off before cooking? Seemed like a lot! Maybe do a comparison of using the recommended 1/2 teaspoon coarse sea salt per pound and not rinsing vs. loading it on and rinsing it off to see if there's a difference in flavor and texture.

Yo Ninja my maaan! I've noticed in your videos (also in goga foods and SVE) That you always use dried rosemary. Is that something you buy at the store, or do you dry it yourself? If so, can you make a video on how to dry them? At the moment I use them fresh, and keep them alive by water them like flowers basically, but when I take off a piece and just leave it be, it doesn't really dry out it just rots lol. Any helpful tips on this? Maybe do a video on the different herbs that are good for steaks? dried, fresh and spice version. Thanks alot! Greets from Denmark :)

Idea for a new video, use different fats to sear the meat. I was thinking bacon fat vs beef tallow vs Oil vs charcoal (as the control) let's see which gives the best crust and flavor!

My question is you make all this delicious food what do you do with all the left overs? There is a lot of steak there! Feeding the whole household I imagine! lol I am a bit surprised that papaya would tenderize better than salt maybe its the acidity? The salt brings deep strong flavor to the meat, almost as strong as dry aged meat but tenderizers the papaya was the winner hands down! 😀😀😀

I have done the papaya as well as pineapple (including the skin) for 45 minutes because some (guga) said doing it for over an hour can change the texture too much and found they have a slightly off smell before and after cooking. (I washed them before cooking). Is this normal? Also, wife now complains i watch too many steak cooking on youtube! Its a man thing, yes!

HAHAHA My wife says the same thing... I think it is!! 😀😀😀 Steak shouldn't have any funky smell, those were smelling as they will normally do... Be careful with funky smelling meat, it can be bad.

Pineapple juice has bromaline in it. Only thing on earth that has it naturally. And it breaks down protein. Nothing else really does. Yes you can age the meat and bacteria will break it down. Pineapple changes the flavor of meat though. So maybe just use a bromaline supplement and a marinade you enjoy. Good luck. I liked the fishing videos. Almost all meat now. Yeah make two steaks. Let one rest but not the other. I definitely want to see that. You could also throw in a sous vide steak cause I’ve heard you don’t have to let those rest.

Since the papaya was so successful with the tenderizing but the straight salt was most successful at flavor, the logical conclusion may be to combine number ‘A’ and number ‘D’ to make a salty papaya purée! Doesn’t sound good on its own 😖, but maybe it would be affective for accomplishing both tasks. What about pineapple? I think it also has that same enzyme as papaya. But I guess you might risk introducing too much sweetness to the beef. Maybe better for pork. 🤷‍♂️

If you try pineapple, you cannot leave it on too long. We left a pineapple marinade on our steaks too long and they practically dissolved. Texture was NOT good.
