❤️ Stir-fried Bean Sprouts with Glass Noodles Recipe - Cooking with Fen & Lady First
💛 Ingredients (Serves 5):
Bean Sprouts (Silver Sprouts) 300g
Glass Noodles 1 bundle
Garlic 12g (3 cloves)
Dried Shrimp (uncooked) 8-10g
(or pre-cooked dried shrimp)
Chinese Chives (white part) 8 stalks
Olive Oil 30cc
💛 Seasonings:
Salt 1g
McCormick Montreal Steak Seasonings 3 * ¼ tsp
MSG (optional) 0.5 * ¼ tsp
💛 Main Utensils:
Stainless Steel Chinese Wok
❤️ "Stir-fried Bean Sprouts with Glass Noodles" Directions:
1. 01:15 Prepare Bean Sprouts:
-Soak glass noodles in drinking water for about 20 minutes. If in a hurry, you can also use hot boiling water to soak, which shortens the time.
-When selecting bean sprouts at the market, choose shorter and plumper ones. Remove the heads and tails of the bean sprouts.
2. 02:38 Prepare Chinese Chives and Glass Noodles:
-After soaking the glass noodles in drinking water for about 20 minutes, check if they have softened by pinching with your fingers. They should break easily.
-Cut the Chinese chives into segments close to the root, about the same length as the bean sprouts. The remaining dark green part can be stored in the fridge for other uses.
3. 03:30 Stir-fry Bean Sprouts and Seasoning:
-Heat the Chinese wok over medium heat with olive oil, then add garlic cloves to infuse the oil with fragrance.
-Turn the heat to medium and add bean sprouts, Chinese chives, glass noodles, and fried dried shrimp (Acetes erythraeus Nobili). Begin seasoning with the suggested seasonings, adjusting according to taste preference. If the glass noodles are still a bit dry, you can add a small amount of hot drinking water and stir-fry again.
-Turn off the heat and add an appropriate amount of dried shrimp (Sergestid Shrimp) to garnish.
