I have been canning soups and stews and chili and roasts for my son and daughter-in-law for Christmas. They are busy working parents and don't have much extra time, so this gift is a "gift of time" for them.
I finished strawberry jam with jalapeño and cowboy candy late last night. This morning I woke, went to the kitchen , they were so beautiful. Productive evening.
I just canned up 14 quarts of garlic beans (pinto beans) my hubs favorite and 8 quarts of cherry pie filling and 2 quarts of sour cherries in juice (first time). I can't wait to try this recipe. Thanks for advising how to use it too. I'm not usually adventurous with my cooking, so your suggestions help immensely. Fyi I have been enjoying your videos for years. Thanks for all you do.
I purchased 18 lbs of chuck roast this week that was on sale for $1.97/lb. and canned a dozed quarts of chipotle beef chili along with 6 quarts of chipotle beef taco meat. Yum! Now I'm off to the store again because pork butt is on sale for $0.97/lb. I can't wait to can up some Cajun Pork Butt! Thanks for great recipe Linda.
Today I did 13 pints of chunk potatoes. It is a lot of work but I’m happy about doing it. I think the prep a day, can a day is great. Especially if you have bag or leg problems. I have great admiration for my RU-vid friends that can. I don’t know how you talk and can at the same time. Lol. Thank you for all you do!
I canned some corn that was in my freezer in gallon bags I thawed it cut it off the cob put in quart jars and also some ground beef that was in the freezer that needed to be cooked and canned.
I love the way you roasted the pork before you candid I’ve done it both ways and yes they do work for roasting it gives that extra bit of flavor oh and by the way I live here in Kalama to thank you again for your recipe
I haven't picked my garlic yet. Two years ago I ended up with tons of garlic that I ended up freezing part of. Keep forgetting it's in the freezer, but it is there for when I need it.

Last week safeway had hamburger on sale so i did 7quarts of jenny goughs meatballs. So stinkin good. The week before chuck roast was on sale so i lightly smoked it and canned some for bbq sandwiches. I also grabbed 2 pork shoulders last week and tossed them in the freezer, i definitely am going to try this if i can find the cajun seasoning, last time i was at winco they were out😪
I don get it??? So many folks are asking for the ingredients in the Cajun seasoning, not one reply from Linda. I know she buys it pre-maid but we all could make it "if" we knew what the ingredients are.
😂Zhi, Linda....I truly enjoy you and your videos and do indeed use your wonderful recipes. BUT.....one request, please. Can you speak a little louder on the videos? Sometimes it sounds as if you are speaking to yourself because it is so soft. I don't want to miss anything! Thanks for all of your delish recipes that I have on my canning shelves. Keep them coming. This 84 year young canner is addicted to canning!
I've found that oregano & sage turn bitter when I use them in canned meats. I now only use the better than bullion in my jars of meat. Gives the meat a much better flavor. If I don't use the broth to make a gravy with then the dog gets it on his food.
That Cajun pork looks delicious! I definitely want to make this! I haven’t canned anything yet this summer, but I plan on making some strawberry jam and some cowboy candy soon. Then August and September will probably be my big canning months! I have never grown garlic, but plan to plant some this fall! Our garden is flourishing on our patio though, tomatillos, peppers, tomatoes, cucumbers, eggplant, beets, cantaloupe, watermelon, green beans and lettuce and flowers. Also raspberries, strawberries and blueberries!

I am looking forward to canning beef stew, my chili/pasta sauce, and this great recipe! I've been learning about the full meals, hearty soups, chilis, and seasoning to beef/pork/chicken. Linda, I am in New Zealand and buying a pressure canner is out of the question cost-wise. Is it safe to can using an ordinary pressure cooker? I have a very heavy pressure cooker and would like to give pressure canning a go. We really do not pressure can here at all as we can buy fresh produce all year round. It is more a ''want to try it'' thing for me.
I know right? Putting the recipe in the "show more" would be wonderful or where we could find the recipe for ourselves. Sadly hardly any of the channels do it.
