Wa about time i got busy again. This time i wanted to do something that wasn't naniwa, shapton or king. So i went for Suehiro. i had a new cerax 1000 grit stone that i hadn't had the chance to test out yet so it was about time.
I follow up with the Ouka 3000 grit whetstone. A very fast and comfortable stone to work on. I could have stopped after the Ouka, but the Rika was yelling at me, so i didn't have a choice.
Discovered some chips at the end there, but im already working on the next video where i remove them.

I was very surprised too with the cerax 1000 speed. The debado s is a little harder and does not load up as much. :)

Another great vid. Thank you. If you haven't tried it already......... Try sharpening normally up to the Ouka 3K and then take a few edge leading strokes on a Shapton Glass 16k or some other very hard high grit finisher to finish up. The resulting edge is super keen with great bite. I also found this technique lets me use some of my other wise too smooth very hard Natural finishers.

I got the new Cera 1000 and I had a bad experience. I found the stone to be very muddy and it would dish out extremely fast. Even faster than some chinese stones.I sent it back and got the "old" cerax 1010 which I absolutely love. Nothing bad to say about it

It could be a bad stone. I think i need to dig it out again to have a look. I absolutely love muddy stones though :P

Muddy stone is not bad my friend.. The mud is the abrasive agent released by the stone witch adds the speed but i know where you coming from cause i have both new cerax and cerax and i also love old cerax more cause its not so porous and its not loading so much, but in performance and feel they are really not so different

hi, right now I have only a 1000 grit stone. Would you recommend getting the ouka or the rika as the next stone? Knife would just be used to cut veggies and fruits mostly

When you said on the 3k “always check for the Burr” we’re you really able to feel it? Or did that come out of your routine?

I have to keep my stones flat, I currently own a Shapton pro 5000 but I don’t like the feel. Besides the fact of it not being a splash and go how would you compare the Rika to the Pro in terms of how fast would it dish and it wearing down by flattening?

Hey guys. I'm using white Cerax #1000 (1010) for 3 months now. My first ever stone and i like everything about it, feedback, speed cutting, doesnt absorb much watter when use, hard enough but not verry hard ( verry pleasant feeling) but for 2 months i was sharpening only cheap Inox knives. Then i got my first japanese Tojiro Gyutoh Shirogami White2 60-61HRC, and there is a big difference in feedback when sharpening 60+HRC knives and speed. Im interested if anyone did sharpen on Cerax1000 (1010) any harder knife blade like 64-66HRC to understand if it keeps up with cutting speed or it takes too much time to sharpen on it.

Hi. I sharpen my Tanaka Blue #2 on the cerax 1k and rika 5k, followed by some leather stropping. Does it really make a practical difference in your opinion in daily cooking to add a naniwa snow white 8k in the lineup ? Thank you

If you like sharpening its a great addition. But the edge you get off the Rika 5k is more than enough for everyday use. :) personally i love sharpening on the snow white though. But its not part of my everyday routine as of now.

Hey, new here. Have you tried the Shapton Glass. I have the 1,4,6K and they are really great. Not the softest stones but damn they cut fast. Would you have any recommendation between the Kitayama 8K and Morihei Hishiboshi Karasu 9K (It's a beautifull stone but I don't know how it performs), if you ever tried one ? Best,

Hey. First and foremost, welcome 😀. My supplier in Japan don't sell the glass stones, so I haven't had the chance yet. They are an export-only model, so domestic suppliers can't distribute. (If i have it correctly). But they have so many other stones 😅. The glass stones are on my list, but I do have a few of the kramer glass stones and i love them :) . As for the kitayama vs morihei, I don't have any time on the morihei. But they are designed to feel and behave more like a natural stone. The kitayama is a tad hard for my liking, but it's a dream if you use a nagura :) I feel like 8/9k is a very high grit, and for softer steel I would probably be looking at a shiramine 6k at the highest. But if you are into harder steels, and like to work on hard stone I reckon you would be happy either way. And can I please throw in the naniwa junpaku aka snow-white as well. I just love that 🥰

@@lofotenknifeworks2278 Thank you for your answer. I do have a couple of knives harder than 60 HRC (Stainless) and will probably get some more over the years. At this point it's not really a practical choice since I have all the stones I need to get a razor edge (140 to 12K) but more a luxury to try different finishes and stones. I'll take your recommendation in this regard and look for the snow white as I've also heard a lot of good things about it. I'm still quite curious about that natural stone feel of the Morihei since I never owned one. Best,

Id probably go for the 3k for everyday use personally. I use mostly stainless steel knives and 3k is plenty enough to keep them sharp :) If i had more knives with harder steels and took them to lower degrees than i do, id go for the 5k :)

Are these stones also good for sharpening straight razors?

its really dependent on the state of the razor. You could go as coarse as 1k, but only for reprofiling or establishing a completely new edge on it. For maintenance you rarely go below 8k . Razors are not my fortè, but i hear alot of sharpeners really like the naniwa superstones for razors, as they are not so aggressive and polishes well :)

My favourite stone is any 1000 grit diamond stone. Fast cutting, no fuss , perfect results.

I agree. on soft steel i could start and finish on a 1k any day. :) But i havent tried any diamond stones yet though. I just use my atoma 140 for stone-maintenance. What diamond stones/plates do you prefer?

@@lofotenknifeworks2278 You mean wich grit ? or brands ? 400 grit for resharpening and 1000 for finishing , then strop on stone and cow leather strop. The strop really gives a top notch result. As for brands my small dmt got destroyed immediately so I'm not happy , my favourite have been my chinese ones, 6 years and still working amazing, also super cheap to buy. It's funny how a 20$ one can outshine a DMT . Afterall a syntetic diamond electroplated should be the same regardless of brand. Cuts VG10 like butter.

@@dimmacommunication Thats exactly why i test ALL the stones i sell. And i always tell my costumers that just because someone says a stone is good. you might just end up hating it. Its all about what you like, how you use it, and what you use it for :) And often you pay more for some brands than others even though the manufacturer might be the same. China is a special case, because much of their export items are garbage. But they do make some good stuff as well if you know where to look ;) (or are lucky, i guess) :P

According to my supplier its just the move to a packaging with a stand much like shapton and naniwa has done lately. There is a difference in color though, and i have yet to get my hands on the "old cerax" to do a proper comparison. Its on my to-do list though :)

Yes i did. The plastic part that the stone is glued on is very pliable. So I just carefully pulled them off 😁

My Cerax 1k (1010) is white color, your 1k is gray'ish. What is the model # of your 1k?

This is the "new cerax" line. It should be pretty much the same stone, although a little different color, and it does come with a stand/case kinda like the shapton, and the naniwa arata/kagiyagi. I think they are trying to imitate the idea of including cases with the stones, that is so popular nowadays :)

its because the one in the video is a "new cerax - cr-1000-b" while yours is the "cerax 1010". I think its pretty much the same stone, but with the popularity of the "cerax" line i think suehiro wanted to try something in the line with what shapton has done for a while, and naniwa has started doing in japan now with the gouken arata, and kagiyaki. That is delivering the stones with a storage box that doubles as a stand. I dont think the cerax and new cerax is too different besides the way they are delivered (and the color) but ill try to get a side by side comparison done in a future video :)

@@KellAlbuquerque Thanks for the reply. that means it is a difference between the 1010 1k cerax, and the CR-1000-B 1k New cerax. Probably should start getting a few of the 1010 in as well to do a proper comparison, as well as feature them in the store. A good bunch of my costumers (and me included) prefer my stones without the base :)
