table65 is the first overseas venture by Dutch chef Richard van Oostenbrugge who used to helm Michelin-starred Bord’Eau Restaurant Gastronomique in Amsterdam.
It takes inspiration from the fun and casual dining concept of van Oostenbrugge and Thomas Groot’s acclaimed Amsterdam restaurant 212.

When they make the foods like it its more meant for tasting new and experimental stuff. Not so much to gorge yourself, you're there for the experience and atmosphere. It more like entertainment with interesting snacks.

Fine dining is never about large portion sizes. You can't truly enjoy the flavors if you're stuffed to the brim. And with that said, at fine dining experiences you gonna get multiple dishes to eat in the course, not just one. So it all adds up by the end.

Astoria usually I'd agree but these dishes (mostly) seem to be a pretty good size considering they're made with expensive ingredients, and also each one actually gives a unique experience. The chocolate balloon one, for example - it's a good dessert size with a really unique thing attached to it, not worth the like 50$ they're gonna charge you for it but it's definitely a step in the right direction for fine dining.

I want to try so badly but I'm broke!! People in the comments do not understand fine dining, its about tastes and textures, its eating art. They dont sell it cheap bc it isnt worth cheapness, smh at least try to understand why its like that. They dont half ass the food or follow simple instruction, they create art and then recreate it everytime someone orders it. Its an intimate experience with food, someone took hours and days to come up with beautiful art that also has the unique blend of high quality ingredients they want to share with the world.

As a cook I really love how they present their food, its fun and modern, most people would sag its pretentious but its not really since theyre trying to innovate, the food industry is very fast, and competitive, you have to be extra creative.

I would agree it is pretentious, but even more so its gimmicky. Which one could argue is worse than pretentious. It started with all these hyper-realistic cakes that bakers started doing, now you got this guy and probably others making things that look like bones and what not. I'm all for aesthetically pleasing, even beautiful looking food, but at some point it just becomes a gimmick.

I have never eaten in a michelin star restaurant but would love to someday. I don’t get why people are so mad about prices. I think it will be pricey given the layers of flavor and expertise put into it. Plus the ambiance of the restaurant, the service.. ooh i would love to experience that one day.

I've gone to a small plate restaurant before and what I love about it is that the food is not only surprisingly filling but you are able to order multiple items and be able to try many different foods. It's not as expensive as you would think.

People who complain about fine dining are the ones who don't experience food. They only eat as a nourishment and to fill themselves. They don't try to enjoy it or have fun, they're just there because they're hungry. It's like needing a car to go to work and complaining about the people who build/buy expensive & unique automobiles.

Jonathan Well, because it’s not just about getting full, it’s about experiencing/ tasting a new different kind of food, fine food which is very complicated and required a lot of skills to make. And it’s not for everyone either as it’s expensive, when we still struggle paying bills each month, of course this kind of thing makes no sense and is a waste of money, not so “practical” as you said. But when we have so much more than enough then we would want to experience things differently, even with food. And i don’t know about this restaurant but i have tried some michelin restaurants (i’m not rich, it was special occasions), the portion is small but there are like 6-8 different plates, we were so full that we forced ourselves to finish the dessert. It was not just pretty but super delicious, i don’t think i can ever make such a dinner at home :(

Well, if this restaurant is anything like 212 in Amsterdam, maybe a second star is in their future! I just love the concept of the bone marrow dish. So moreish, so indulgent, and yet prepared in the lightest possible fashion! Clean, elegant cooking with straightforward flavors, picture-perfect technique (I mean, just look at the thinness of that "Apple") an eye for pretty presentation. Looks lovely!!!

epicwarding it does actually! You have to look at the quality of the ingredients. These expensive Michelin rated restaurants use the highest quality which of course is more expensive than most regular restaurants. Furthermore the price of the chef is also added. A more popular/skilled chef will obviously require a higher pay cheque than say someone who just stepped foot into the culinary world,

It's like seeing a painting from your monitor, but then actually going to the museum and seeing that painting in person is a whole other experience. Just like with fine dining. You see it on TV, you think it's stupid, then you take chance to go and experience it and you realize that it's a whole other level of art, for like, your stomach. 😅

But when you have high quality (and often rare) ingredients made in a unique way with flavours and textures you've never experienced combined intentionally to create a peice of art or story about its country of origin ... It's about paying attention to each bite, fully appreciating it. Not shoving food, which you're not even paying attention to, into your face.

So for people that live pay check to pay check or are slowly trying to save funds, its more important to eat healthy, get full, and basically get your money’s worth. But for people that are wealthy and can afford high quality food anytime anywhere they get bored. So they don’t eat things like “an air bubble apple” for nutrition or to satiate a hunger, they eat it for the experience fine dining can serve.

People over here complaining about the serving size and the price tag. Look, if you don't want to dine in a fine dining restaurant then sure, go ahead, but just note that that food and price has years of cooking experience behind it. You're not just paying for the ingredients, you're also paying for the years of hardwork and study the chef put in to make that specific dish.

@@mallows9779 or how people think one plate is $80. It's like, "No it's not 80 dollars a plate. You're getting 10-18 courses from a fixed menu, for a fixed price of say, $150-300+/person." That's a lot of plates. That's a lot of gourmet, high end, carefully prepared food. That menu is constantly changing with the seasons as well. The course you ate during the summer is gonna be completely different from what they serve in the spring, or during winter. Which is awesome. I always tell people, "If you don't like that, then that's fine, as no one is forcing you to dine at these establishments. McDonald's is right down the road, so there you go..."

Wow, it actually became true. There is a satirical video published in 2014 of a channel called "Porta dos fundos" where it actually makes fun of the gourmetization and smaller portions. It's called "Restaurante moderno" (Modern Restaurant). Go watch it.

It's sad people here just doesn't understand tasting menu restaurant. Its an experience yes it'll cost $200 but you're going to eat 10-13 courses plus snacks, you will definitely get full or at least really satisfied. If its not your thing so be it but don't think this is just for the super rich, this is also for middle class people to go celebrate special occasions. It's like going to a concert or performance, yah its cheaper to buy the album and listen to it, but to experience it is just something else.
