Professor Benjamin Bikman earned his Ph.D. in Bioenergetics and was a postdoctoral fellow with the Duke-National University of Singapore in metabolic disorders. Currently, his professional focus as a scientist and professor (Brigham Young University) is to better understand the role of elevated insulin and nutrient metabolism in regulating obesity, diabetes, and dementia.
In this interview I speak with Professor Bikman about his research in Biochemistry and Insulin, and what exactly this does to our metabolism, health, and chronic disease.

I'm a huge fan of you Dr. Chaffee. Because you are one of the few people in this carnivore scene who are actually very strict. No coffee, no sweeteners, no cheat meals here and there. And this really resonates with me.

Dr. Ben is a beast!! What a great video. As a clinician/scientist I can’t believe I missed this for so long!! About a year before Covid I really dug in the literature. have been doing it ever since. Have been studying this nightly for three years. I have also been a carnivore going on three years now. I feel better than I ever have in my life. I’m so disgusted that we don’t learn this in medical training!!! If it wasn’t for the Covid fiasco I don’t know if I would have even figured this out. That whole ordeal made me question everything. Who knows if even half the science we have read over the last 50 years is even worth a shit. Fantastic interview!

Maybe that was God's plan all along! Hard to listen to the still small voice unless we shut down a bit. So thanks Covid for what we have been able to learn. Adversity is really our friend. I lost my brother to Covid last year but I have gained so much insight and prospective. Carnivore is part of that.

Thank you so much! Yeah Prof Bikman is awesome, I was really glad to get the chance to soak with him. Yeah that's exactly what I have been doing as well, just pouring through the literature to see what we actually know, and what's complete garbage. So much of medicine is based on best guess as opposed to hard science, and then still more is based on hard lies. Definitely time to shake things up a bit!

2 years ago I was bed ridden most days. My digestion was extremely slow. I was puking 24/7 w severe stomach pain. Water hurt me the most. My intestines wouldn’t work anywhere from 2 weeks to a month & change at a time. My stomach was so distended. I had severe carpal tunnel in both hands. One I had surgery on but symptoms came back. Bone pains in both hands as well. I slept a lot & had a hard time carrying a convo. My therapist put me on carnivore for mental & physical health. I have c-ptsd, panic disorder, & ADD. My carpal tunnel symptoms stopped. My depression & suicidal thoughts lifted. A big chunk of anxiety vanished. My obsessive compulsive thoughts & behaviors stopped. My Severe mood swings stopped. My boyfriend has rickets on a genetic level. which turned into severe osteoarthritis everywhere. He had a double hip replacement at 45. Along with a hip flexor surgery. Years after the surgery his thigh was hard as a rock. Doctors didn’t know why & couldn’t help him. Every morning he woke up w his whole body stiff as a board. Hard to move and hard to walk. Carnivore diet reduced his pain drastically. He stopped waking up stiff as a board. His thighs after about 2 months turned into a normal jiggly thigh again. He’s able to move around much better. He can do a lot more. A brand new lease on life for a person who was just handed opiates & sent on his way. He was giveN no hope.

I feel powerful on a carnivore food plan. It’s hard to explain but I drop midsection ripples that won’t disappear any other way. No macros, no supplements, no fuss. Just grass fed beef and butter, pastured eggs, some dairy, and water or unsweetened tea. Black coffee in the morning to greet the dawn. I can eat fruit if I need a treat, and I never turn down a small piece of birthday cake at clan celebrations. I don’t act like a jerk about what I eat when I’m in a crowd. My doc keeps wanting to put me on statins and BP meds because that’s what every 70 year old is on, or so it seems. But test results never indicate these are needed. I’m also slim like I was in college. Hard to find slim post-menopausal women these days. If anyone asks, I’m happy to explain my carnivore strategy. It’s magic!

THANKYOU from ALL of us out here that need this info DESPERATELY. PLEASE KEEP US INFORMED!! .. and ease forgive me for returning to my OWN desperate plea.. PLEASE keep reminding people that domestic food animal producers are fighting for YOUR right to EAT real food and be as healthy and productive and HAPPY as you can be thanks to your carnivore diet. I'm a life long carnie at 81 .. feel and work like I did at 20-30.. I'm a cow/calf producer , backgrounder , farmer who has watched farmers leave this industry in droves .. We have been vilified as inhumane and even cruel and we get the lowest return for our work and risk and financial vulnerability of ALL the primary producers . Very few young people WANT to do this job and those that do ,can't afford the land and inputs. Our Animals and our labours are ALL about regenerative agriculture .. Without these farmers , YOU ALL will have to go back to eating the wrong foods and being sick . PLEASE HELP US HELP YOU .

Sir I SO hear you! I just turned 60 and I started the “lion diet” in Jan 2023. It’s hard to hear that people like you [who are in the meat industry] are vilified and “robbed”. I do think there is hope though, as the truth of “carnivore” is gaining speed, and people reach the “bottom” of their health only to realize that the “SAD” is what’s killing them. I was blessed with a high tolerance for carbs, so when I was young, I thought I could eat any old way…. That caught up with me in my late 40’s. And at that point everything started to go to hell… but the one reason for my move to Carnivore was MENTAL HEALTH! And it works [for me anyway]. What is surprising is ALL the other things [bad] that went away. The most frustrating part [of hearing your story] is that regenerative [cattle] farming IS the best way to HELP the planet and restore our lands and NOT the destructive force that the woke, communist’s claim. In simple terms: there is a reason the central plains WERE the most fertile lands in the world… BISON [wild cows] ! It’s a simple system. The Cows eat the grass, the cows “digest the grass” and fertilize the soils… fertile soils grow abundant grasses that convert CO2 and sun energy into more grass, that the cows [in turn] eat… and around and around we go. A “carbon soak” [if you think that’s important?? LOL] at the same time produces the most nutritious food [beef, bison, deer, etc] and fertilizes the lands [naturally] and grasses are “perennials” which are low maintenance and require NO working the land like corn and Soy Again, it worked for millennia … we should turn you cattle ranchers into hero’s NOT villains!

A young farmer friend built a $40,000 processing shop on his small farm where he raises pastured beef & chicken & sheep. That's what the ranchers all have to do, start their own processing business to sell direct to customers. We bought half a cow from him. Dairy makes good money too when you sell direct to customers with herdshares. Diversified farming is more profitable and financially secure than monocropping of plants or livestock. You just need more people on each farm working the land and running a butcher shop & store & tourism, crafts etc. Use the land in more ways.

Dr. Bikman is right that the fear of protein has its roots in the diets used to treat epilepsy but I think that the epileptologists even need a rethink on this topic. I had a seizure disorder for 35 years. Keto (really strict serious 4:1) did make it somewhat better but it was only when I quit counting/measuring/obsessing about ratios etc. and went fully carnivore that my seizures stopped completely.

I'm really glad that they are under control now! Yeah I think that full Carnivore would likely provide more benefit for epilepsy than just keto, because it's even more in keeping with our biology

@@anthonychaffeemd I think it is more nutrient dense too. In order to fit in enough fat to make that 4:1 ratio, you end up basically living on coconut oil and not getting enough protein. BTW, I am now 9/10ths off of my epilepsy medications. Working on that last 1/10th. No loss of seizure control. WoooHoooo!

Yay! I absolutely credit Dr. Bikman for enabling me to save my own life! His book Why We Get Sick opened my eyes as to why I was a Type 2 Diabetic and it wasn't 'genetics'. His book was the catalyst for me to take back my health, start a Keto life style mid-February 2022 and reverse my T2diabetes in just 6 weeks! Some day I hope to shake his hand. 😀I have reversed or eliminated several 'chronic' health conditions in the last 4 months and went Carnivore recently after listening to you and Dr. Berry. The standard info our doctors give us on nutrition hasn't led to better health at all. Thank you for interviewing great minds like Dr. Bikman and for getting this important, life saving information directly out to the people who can use it to take back their health AND save their own life! You are never too old to make a positive change; I'm 56! Listen to Dr. Bikman and Dr. Chaffee and just apply the information to your own life and do it TODAY! Just know, 'T2diabetes isn't in your genes, it's in your pantry'! You CAN reverse it and many other health conditions!!

Dr Bikmans book "Why We Get Sick" is great book. Dr Ken Berrys' book "Lies My Doctor Told Me" is great as well. Dr Jason Fung also has some great books. Wish that I had got into this stuff 30 years ago.

I feel Dr Fung's book, The Obesity Code, saved my life at 63. I started fasting and keto diet at the same time. I did go thru a rough transition with a lot of cramps in my legs, and blood pressure wonkiness. I needed electrolytes. Once I figured that out, I was good to go. Now I am addicted to health podcasts. Ben is a favorite! I learn so much from him every single time I hear him speak.

This is such seriously important information!! I feel so badly that I yelled at my poor Mom! She had a series of mini strokes and was told to eat more fiber, etc. So, one day, I saw her put butter on her bran muffin. Then, she put more butter on it and again, more butter. I yelled at her, "Mom!". Of course, in my ignorance, I didn't realize that her body was fat starved. She should have been eating all the meat, salt and fat that she wanted and needed. She died of alzheimer's disease. =( Back then, I had also been 'buying' into the low fat thing, and that's when I started packing on the belly and getting my body all confused. Thank God for your work, guys!

So far going strict carnivore for the last few months I’m actually noticing my IBS is pretty much gone. I have no idea how long I’ve had it but it could change my whole day. I have gotten rid of other negative health problems as well. However just knowing my IBS is gone says eating plants for me was causing me lots of issues. I used to eat a lot of plants and organic for 17 plus years. Never focused on fat or protein because of what kind of information I would come across

Gentlemen, you are beacons of light in a dark world. The comments to these videos and those of your peers, (Fung, Berry, Ekberg, Mason et al,) speak for themselves. Who’d have thought that youtube could be saving and improving health and lives where hospitals cannot. Never stop doing what your doing. At 5’7”, and 54 years old, I’ve lost 10kg and now have a BMI of 24.5, body fat of 18.3% Have never been massively sporty but been fortunate enough to be fairly fit but keto/carnivore is just on another level. I was more interested in health than weight loss. (That was just a happy by-product) Learning about the proper human diet, autophagy, and just general well being has been equally enlightening. My only only true fear is for the day when when we can’t actually buy meat! (Which i’m sure plenty would welcome). That prospect actually worries me now.

@@theophilusmann7869 consider LoSalt. It’s 60:40 potassium and sodium chlorides. I don’t know much about its production quality and it turned out we only have the no iodine variant in local markets. I added a magnesium supplement but tbh it makes me feel jittery. I’m not exclusive carnivore but I doubt my chlorophyll intake is “sufficient”.

I had the same mental state after 27 yr marriage with psycho/sadistic 24/7 narc - not sure what the correct category is 😂 I didn’t have carnivore as I didn’t know and worked through using YT video education but it took 2 years!!! I nearly didn’t make it. I am sure carnivore at the time would have sped up the process of mental de-toxification .

That comment on blowing out the skinny marathon runners hit home. Last weekend I did a 10K. 46:29. Never ran a race in my life before. Started running on top of my strength/HIIT routine. I am roughly 190lbs, 6 foot 1, 26 years old, and 98% carnivore for a few months now. I was the leanest most muscular guy in the race LOL (Kinda douche saying it..) BUT i got 18th/167 runners. I remember as I got closer to the front the guys kept getting skinnier and skinnier. I was 20 hours fasted for the race, and I couldn't help but notice several ppl at the starting line frantically slamming glucose packets haha. Cheers!

after fasting 7 days I could not believe the energy I had, was finishing up all the projects I have had around, I'm 72 as well and fasting is the best thing I ever did for my body, going to try and do a 3 day fast 1 or 2 times a month - I am mostly carnivore but I do eat a chunky salad once a day, avocado, cuke, tomato, okra, and tofu with maybe radish in season and sometimes cheese or bacon, I find it helps fill my tummy and satisfies my tastes

@@thomasjohnson6808 my Mom ate basically the standard american diet and lived to 92, but these older folks had way less heavy metals and chemicals to deal with, my Mom also never ate a lot of sweets - I can only say that I have eaten a diet that abused my body most of my life, but in the last 3 years I have stopped eating crap and done more exercise and it has really helped reverse a lot of the aches and pains

i cant believe whats happened to me on this diet. ive tried vegetarianism veganism and none worked. on this carnivore diet: depression gone, anxiety gone, severe gout gone, brain fog gone, bad sleep gone, eczema gone, asthma gone. A zen calm mind attained all the time 24/7, weight training and running because i just feel great, rock solid sleep 6 to 8 hours. and lots more. even my dreams are cool, i started to fly in my dreams its so amazing lolol. all this within 60 days. iam 59 feel 25 good luck to all who venture into this proper way of eating. and thank you to all who have helped me on youtube. without you guys ide still be a mess and suicidal.

Such great information. Started Carnivore 9 weeks ago. I’m dropping weight, my morning BG is under 100 for the first time in years. I still have a “Normal” A1C. My chronic pain and arthritis pain is down about 90%. It’s been the easiest way of eating I’ve ever done. My type 2 diabetic husband is now wanting to come on board. My diabetic husband has now joined me on carnivore. We did the carb step down for him which took about 3 weeks. He’s been fully carnivore for about 3 more weeks. His progress so far is that he hasn’t had to take insulin for a month (previously on 30 units of long acting insulin a day) He is off the 1.8 mgs of Victosa, and has been for at least a couple of weeks. His blood sugars are the best they have been in years. His only medication now is daily metformin and Jardiance in the morning if his blood sugar is over 115. The best part is how much more vital he is. His stamina is coming back as well as his strength and drive. It’s been amazing. Sorry this is so long, but I wanted to say that this has actually been a two part plan. The other thing is that he has been taking the Cerule products. A stem cell enhancer, a joint rebuilder, and an anti inflammatory. It’s a long story, but it has made a lot of difference to.

Much enjoyed this info-packed vid. Thx to you both. Anecdote: At 1:14:00 in Dr. Chaffee states that lower LDL cholesterol has been associated with higher levels of depression. The two times in my life that I tried to get on and stay on LDL lowering statins, I became very depressed and stopped taking the statins. I was told this was not a common side effect. Another type of statin was suggested. I declined.

WOW! As an RN and mother of a nurse and MD with an undergrad degree in nutrition, and a mom who, along with several of her siblings, suffered with Alzheimer's before their deaths, this is earth-shattering info. I am age 64, and I grew up in the FAT-Free culture of the 1970s, as well as educated in nursing school to see fat as the enemy. I am now suffering the side effects of having eaten a high-carb diet all my life, and it took me almost a month to get into ketosis and even lose a pound! And I love that you mention the cavemen and Inuit diets! We were created to be "head-tail" hunter-gatherers to thrive on loads of fat and meat with a handful of wild berries or veggies, not the modern produce that has been developed with much higher sugar content, genetically modified, and sprayed with poisons. I love the saying on the shirts you sell. One of the American cattlemen's groups sold shirts saying, "The West wasn't won on salad!" 👏👏👏

So you saying keto defeats the laws of thermodynamics?😂 Energy does not come from nothing. That is impossible at least in this universe and reality. It is a good excuse though for obese people saying insulin makes them fat, because it shifts the blame from them. You can loose weight on any diet as long as you stay in deficit. High insulin is a result of insulin resistance, a way of the body keeping blood sugar in check. You need to target the root of the problem eating less calories, so cells are not full. Insulin resistance is a safety mechanism. The more energy is burned the more oxidative stress is created in the cell. There is a finate amount of oxidative stress the cell can take at once without causing damage. So the cell becomes insulin resistant. Too much food is literally killing your cells. Antioxidants can counterbalance oxidation, but they are mostly found in plants, the one thing you are reducing greatly with a low carb diet. If you not address the root of the problem you might have good insulin control but still can‘t tolerate eating carbs (glucose intolerance) Loose weight by any way, that will do. If low carb is the way you can achieve that, that‘s great. But you need to be in a caloric deficit. If you eat the same amount of calories before, it is not going to work. It still is the same old story of calories in calories out. And when you are no longer insulin resistant, you are no longer glucose intolerant, so nothing wrong with eating them again. But maybe not the refined ones. Getting enough fiber from vegetables prevents the cells becoming overloaded in the first place, and veggies and fruit provide plenty of antioxidants. Staying on a diet high in saturated fat and meat long term has it‘s risks too. But of course you can eat low carb plant based with low meat/saturated fat.

This is an awesome interview & the science that Dr Bickman details is really unmatched. The great thing about eating protein & fat, is, they help your body feel satisfied so that you don't overeat. Carbohydrates do two things that are detrimental to metabolism: 1) Create hunger because they don't make you feel satisfied, which leads to overeating calories. 2) Carbohydrates increase insulin resistance by increasing glucose secretion. Carbs may not be inherently "bad." They just don't provide optimal metabolic fuel for the brain or body. And, in reality, when a person is hungry & seeking to satisfy their hunger, eating protein will satisfy better & more efficiently than complex whole food carbs. The SAD has programmed people to eat convenience foods primarily, such as fast food or prepackaged processed foods to satisfy hunger. It is actually better for the metabolism to fast and feel hunger than it is to eat those junk foods or a complex whole food carb. Modern eating styles are just programmed big pharm/farm driven marketing. As Dr Bickman illustrates, there is no lower limit for glucose in human physiology for a fat adapted person. The only people who are negatively affected by low glucose levels are those who have insulin resistance--which is probably about 99% of Americans. That is why America is fat. The food pyramid is created by big pharma/farm & the economy is based on an upside-down food pyramid. Eliminate hyperinsulinemia/Insulin resistance/metabolic syndrome & all human diseases will decrease dramatically. That's where all the science piints!

I was eating sausage for breakfast and then had a donut and a sugary coffe drink and back to meat for dinner, drinking only water. I did this for 10 days and 2 days in I noticed my cravings disappeared. I am confused because I did eat my donut and coffee drink but I was so mind blown by the lack of cravings. Even for the donut! (Dont ask an addict why they would keep eating donuts if they didnt crave one...) but my mind was blown. I got off track for a month and back to normal sad diet. I want someone to study the BRAIN and tell me why in the world if I KNOW how great I felt that I am just so unable to follow through with keeping up with the life style.... Cheers to the "free from being a slave to food" feeling. Hope I can get back on it.

So, let’s say you have a thought about food, about eating something that you believe may not be healthy for you, then there could be thoughts or feelings of restriction or deprivation or lack, this can trigger a feeling of hunger and or discomfort. We don’t like discomfort and often will do anything to avoid this feeling. Well, the thought is, “If I eat ________, then I can get out of this feeling of discomfort or panic (or whatever it is you’re feeling). The goal is to learn to become the observer of those beliefs, thoughts, and feelings without taking them seriously, without believing the only way out of that is to act, which isn’t true. The only way out of it is to look at that and not take it seriously consistently. Pretty soon, it becomes habit and those thoughts, feelings, etc., just become background noise that mean nothing.

Get Dr Ben Bickman's book, Why We Get Sick. He's quite a walking brain. So glad I discovered him while watching Mike Mutzel's RU-vid channel. His interview with MM was a light bulb for me. I've been a hospital nurse for fifteen years, work with diabetics everyday. Never put the hyperinsulinemia & hyperglycemia puzzle together until listening to Bickman. He should write a book, "It's the Carbs, Stupid."😅 He breaks down the information from his decades of research into easy to understand language. And, he us really an inspiration to me as a healthcare professional to live a healthy lifestyle & don't follow the standard path. Ketosis is a different level of reality (period).

My IBS ended when I went carnivore! I also don’t wake up hungry in the morning and my energy throughout the day and brain power, is steady. I have more sustained focus with work. Carnivore casserole - 1 lb. ground beef, cooked; six eggs, scramble with some milk or cream; salt; then pour over meat and bake on 400 until egg fully cooked, about 30 mins +. Add cheese if want extra fat or flavor. I even add ricotta on top before baking.

I've been type 1 diabetic for 13 years. Being fat adapted has completely eliminated hypoglycemic symptoms for me. I've had a BG of 0.8mmol and been 100% functional which absolutely melts the brain of the physicians that oversee my results. 😂

Dude! I have been seriously curious about this for about fours years. Thanks for sharing your experience! I know that ketoþcarnivore is a total game changer for T2D, but I've never heard the actual personal experience of a T1D speak to the effects of keto/carnivore on their metabolism. Knowing that many people with autoimmune disease have complete reversal of their symptoms by eating carnivore diet is wonderful, T1D is also an autoimmune disease but I'd love to hear someone like you show how they stay healthy and strong by taking the road less traveled. I am officially restarting everything today. No holds barred. I hope I can be your testimony to others, since ive literally experienced all of these things spoken of today. You have GOT to get USF Associate Professor Dr Dominic D'AGOSTINO on a podcast. Bikman knows him. D'AGOSTINO specializes in ketones and ketogenic research 😊

@@anthonychaffeemd yes i know that personally. Lol. Ive tried to connect Dr.D'Agostino with Dr.Jaquish, the X3 Bar inventor. That never happened. Then tried to connect Dr.Jaquish with you but he pays zero attention to his Instagram DMs now, as opposed to when his product was new, imagine that. Dr.Baker has gotten to interview both of them. Seems to me connection is possible depending upon how badly both parties want to connect🤔 Thats my take anyways 😆 Ive enjoyed all your stuff bro. Glad to have come across it. Your videos and chats have certainly helped me a ton 😊

I first went into ketosis in 1998. Took 3 days of eating just meat to make urine strips turn deep purple. I have been in ketosis probably 80% of the time ever since.

Wow...fabulous info, makes me even more determined to streamline my carnivore diet! I'm a t1 diabetic (probably MODY actually as some things just don't fit in the t1 or 2 box. Never genetically tested😢), the best thing I ever did for myself in over 40+ years of diabetes was go carnivore 3 and half years ago. Lately tho slipping a bit by having a few berries...and I know it just triggers the carb addiction I appear to have. Dr Bikman is one of the first RU-vid videos I watched and his knowledge of how our body works at a cellular level just made me thirsty for more of the same! I have always questioned the standard medical practices regarding diabetes and carbs., this interview just reiterates what I instinctively knew. Thank you so much to both of you for sharing your knowledge and experiences ❤

Love listening! "Plants are trying to kill you" ! I wish I knew this many years ago, now with chronic fatigue, hypothyroid. But low carb, ketovore helps a lot. Please address biological dentistry b/c mainstream dental care is sorely remiss when it comes to safe treatments, especially root canals, which can ruin an individual's health without them realizing it. Also, dental amalgam also ruin health.

Agree. After a root canal infection I started to lose my voice, my jaw ached and fatigue set in bad. Finally found a dentist who checked it and said it was up to me if I wanted the infection removed in my jaw bone, I didn't hesitate! He removed bone the size of two peppercorns from my jaw. Voice still deteriorated to eventual lose but jaw is now offset, could it be due to the infection?? No dentist will say of course. One did say things can sometimes go bad but had no information on it. I have heard that people have died from root canals so I try hard to tell people to avoid them. It's too easy to become infected and it's so close to the brain!
