3/4 cup (125 g) orzo (I used gluten-free red lentil orzo)
2/3 cup (85 g) onion diced
2/3 cup (100 g) cherry tomatoes halved
1 cup (160 g) cucumber chopped
2/3 cup (100 g) bell pepper diced
1 cup (190 g) white beans cooked/canned or chickpeas
1/4 cup (30 g) olives halved
1 batch of Lemon Vinaigrette
