Catching up on some videos and my oh my does this look delicious. I've got to re-watch the beginning so I'll use the correct style noodles. It is fun to buy different kinds but then I forgot which noodle to use for which dish, haha. This will be great fun to try in the air fryer. Thank you for showing how both methods came out, that was thoughtful. You and Dude are the best team!

Looks good Flo! I live in Hawaii and at the Chinese restaurants if we want the noodles crisp like that we order cake noodles. Hong Kong noodles here are dry thin noodles. I love that different places have variations in Chinese styles of cooking. My Gung Gung had a restaurant and taught me to make cake noodles. I think I prefer the air fryer method!! Less mess and less oil. Thanks for the tip. Love your videos, so mellow.

I am a pretty good cook, so I hope I'll have success. I also loved your videos on the pork belly and Chinese barbeque. I'm so happy to find your channel. I use an EVO sprayer from QVC, love it. When pan frying use peanut oil for authentic taste and higher heat in a wok. Most restaurants in the Bay Area you have to ask for HK style or crispy noodles, there maybe an extra charge. Your recipe is almost like mine, but with julienne ginger and snow peas or bok choy.

I wanna just share you a tip that, after boiling noodle, you probably put it into cold water then remove them out and let it dry. That help noodles not sticky and tougher. It will not be burnt and stick to pan when stir frying. :). That is the common method which cooks do. When you have noodles within broth, you probably do the same, to keep noodles warm, you just need to pour hot broth onto it after cooling. :)

Great video, as always. Thanks! Being from San Francisco, I want to mention that SF restaurants serve both soft and crispy chow mein, but you need to specifically order ‘jeen meen (煎麵)’ to get the crispy version. Furthermore, restaurants may have the deep-fried or air-fried versions that are crispy through-and-through (translated as ‘hard yellow’, when ordering) or the wok-fried version that is crispy on the surface and soft inside (translated as ‘soft yellow’ or ‘both sides yellow’, when ordering). Unfortunately, the deep-fried or air-fried version is better made at home because restaurants may pre-make their ‘hard yellow’ chow mein days in advance, so those noodles often taste a bit stale. The ‘both sides yellow’ (pan-fried) version has to be made on the spot, so it will be the fresher and tastier option, when ordered in a restaurant. The ‘both sides yellow’ version also tends to have some Maillard reaction (burnt bits), which adds great flavors.

This Caucasian girl learned to make chow mien in 1989, when I was a young mom, from an elderly friend of mine, Mary Loo, that came to the US from China on a boat around 1950,. She gave birth to her first child on the way. She lived in the Chinatown of Locke in the California Delta. Your recipe is very similar. I have made it often throughout the years using fresh noodles from a local Chinese noodle factory. Fast forward to 2018 and I now live in Michoacán Mexico. No Chinese noodle factory to be found. I'll tell you how noodles come when they're not fresh. I buy them in the grocery store in the bigger city about 40 minutes from my home in a block of dried noodles. Surprisingly not awful. Much better then using spaghetti, which is what the local Chinese/Burrito joint in town uses. Nope, not good. I was so happy to see you use the air fryer. I made chow mien last week and toyed with the idea of using the air fryer but chickened out. Next time I'm gonna do it. I just discovered your channel and have enjoyed the few videos I have watched so far.

For those who can't find fresh chow mein noodles (although every Asian Grocery store in the world now carry them in the refrigerated section) you can use thin dried egg noodles. They used to be called Long Life Noodles and it was a tradition to give a packet to anyone having a birthday, especially when they are in heading into their 70's and 80's. You have to par boil them first. I saw in a recipe, the chef held the cooked noodles up to a fan to air dry them faster so the noodles wouldn't splatter in the oil but he used a lot of oil. I would've used paper towels. Air fryer is the way to go.

Flo, I air fried my noodles w/o blanching or spraying oil because the noodles here in Malaysia was already cooked and has oil on it. It crunched superbly! No hassle.. Just load the noodles into air fryer ... mine was 5-7 mins for one portion only... used only 1 tbsp of oil for the sauce ... total satisfaction! Thanks again
