This delicious bean burrito uses cilantro lime rice influenced by Chipotle The rice recipe comes from Cookie and Kate: cookieandkate.com/cilantro-li.... She uses long grain brown rice. I used white long-grain rice which has different cookie instructions:
White grain-rice:
Place 2 cups water and 1 1/2 cups rice in pot and let it come to a boil.
Reduce heat to medium and allow it to simmer for 20 minutes stirring occasionally.
Taste test at 20 minutes. If it's not done, add 1/4 cup water and cook for 5 more minutes.
Then add 1/2 cup chopped cilantro, 2 Tablespoons lime juice, 1 1/2 teaspoons lemon juice, 1/4 teaspoon salt (optional) and stir.
OR, you can make the rice in a rice cooker and add the cilantro, lime/lemon juice and salt when it's finished.
Burrito:
Saute 1/4 cups onion with two cloves of garlic in 2 Tablespoons of water.
Add 1 to 2 cans of rinsed black beans, 1/2 teaspoon cumin and/ or 1/2 teaspoon chili powder and 1/4 teaspoon salt (optional).
In separate pan: Saute sliced colorful peppers in water for 5 -10 minutes.
Place rice, beans and peppers in a tortilla, wrap or bowl and serve with guacamole or avocado slices and your favorite salsa. ENJOY!
