These vegan and gluten-free cookies have a great flavor combining apples, cinnamon and peanut butter! You can sub out the PB for almond butter or sunflower butter, if you have a nut allergy. I used a pink lady apple. A Honey Crisp would be great also. They are sweetened with maple syrup, banana and raisins. I doubled the recipes in the video, except for the raisins.
