We’re taking sweet potatoes and stuffing them twice with a delicious spicy eggplant taco filling and walnut meat. Next, we’re topping them off with a stretchy homemade vegan mozzarella cheese which according to several taste testers, tastes “close to the real thing”! All vegan, plant-based, and oil-free!
