Thanks Mike! My son bought this camera and I'm blown away with the quality and he is just now figuring it out. I may buy a few of these for the channel, but with a auto lens. He did all of this in manual mode. The Wagyu was OMG good! Thanks for checking it out brother!

I live in California.... Even when it's not wagyu Tri tip is awesome if you cook it right and slice against the grain .... Great video Russ

All the Tri Tip I have had so far has been really good, and yes against the grain for sure. I must say that this was the most tender Tri Tip yet and of course the most marbled being Wagyu. Thanks for checking it out, I sure appreciate it Ray!

That Tri-Tip looked juicy and tender and I liked the way you reverse seared it. Cooked perfectly to medium rare is exactly how I cook beef. Hard to get outside and use the Weber Kettle here in Vermont at -15 F with 3 feet of snow, but if there's a will, there's a way. Thanks for sharing and cheers to you Rus.

I love my meater, they have great customer service. My first probe was not reading ambient temp correctly, got a new one in 2 days with a return envelope to send back the old one. Never a question or an issue. And that meat looked Awesome

Great post. Good to see 'American Wagyu' is coming to a forefront, and more affordable. You cooked that purrfectly...Not sure why, but once a month or so, I have to re-bell and check my subscription. My parents have pasted years ago, and im in my 60's, but I still want you as my pops.

Thanks, I appreciate it! Yeah, prices are actually surprising to me. They sell this same tri tip for $55 dollars and I spent almost that much having a local butcher cut one out for me one time and it was nothing special, not even prime. We can't buy tri tip here yet, so nice being able to have it shipped on those occasions when you want it. LOL, Your older than me :)

thanks for the link to a new purveyor for Wagyu,that is always a good thing.i'm here in California where Tri Tip was first "invented" and yet i havent done one in a bit.i think i am gonna save up and go big at home.Maybe even from Wodagyu.Great sear at the end,i get funny looks when i let er rip like if flame and crust is bad.Also kudos on saying it right,when people pronounce it Wa-Goo it sounds like....goo.That is not so appetizing.Lol,thanks again,my mouth just watered taking a last look at the sliced product.Keep up the great videos,looking forward to the Brisket video,your giant porterhouse video is up next on my Watch Later list,it is my favorite steak.

Checking their site they dont mention grade or marbling score, much less the prefecture the wagyu came from or offer any certificate of authenticity with the beef... All indicating that they are offering domestically raised "american wagyu" likely crossbred with black angus aka "wangus". Id save my money and check crowd cow or miyazakigyu for authentic japanese wagyu a5 or snake river farms for a fair price on high quality cross bred "american wagyu" lots of places like this wodagyu site charging a premium for "fake" domestic wagyu thats not much if any better than a quality usda prime sample of the same cut. Thats a beautiful tri tip. I never had Wagu - it is way too expensive here - but it sure looks wonderful. I will be cooking a regular one just like you did soon, it is the best way imo :)

Thanks Lasse! The price for this one really isn't that bad on their website. I paid almost that much to have a local butcher cut one out for me from just a regular steer with hardly no marbling at all, but some of the steaks and higher end beef is up there, but oh my goodness, is it so good!

I bought $300 wagyu steak on the upper East Side of NYC ten years ago (the restaurant was a like a row house). Everything else was perfect, but the steak was way under-cooked (I like rare steak, but this was barely grey on the outside with uncooked fat in the middle of the long strips). I think it was a rib eye, but I sent it back and asked for it well done (I was strongly dissuaded), and the well-done wagyu was the best piece of meat I have ever had in my life (note "meat" not "beef"). This is good stuff, especially if you can get your hands on a skirt steak (cooked it as one big steak, with a well-done, crispy tip and a medium rare back). The quality of beef and pork matters so much. The reason those restaurant pork chops are so much better than yours are because they literally bought better quality pork.

That looked wonderful, Russ. I've never had wagyu, and probably never will, due to the high cost. It looks like you have changed knife brands; I thought you swore by MAC. You also changed the channel outro/logo - I like it. I hope the weather is agreeable where you are; it's -16 degrees here now (not including the wind chill). At least the high today should reach -1.

Thanks, I appreciate it! I love my MAC knives but thought I would try these out for a bit and see how they do. I still haven't had to sharpen my MAC Chef's knife. I've only used a steel on it twice to straighten the edge a bit. Be careful in that extreme cold! So glad we don't get those low temps, but we sure pay for it in the summer months however.

I was really impressed with this Wagyu Tri Tip. I've only had Tri Tip a few other times because I can't get it locally, but this was more like eating a very high end ribeye steak. So good!

@Smoky Ribs BBQ Glad you enjoyed that wagyu. I heard that tri-tips are still hard to find in certain places around the country. My Costco had tri-tips, but didn't stock flap steaks, which I was looking for to make fajitas with. They carried it few months back. It's hit or hit, like so many other items at Costco. The butcher there told me that they get flap steaks in every one in a while, but they had tri-tips. He suggested I use one of the smaller tri-tips and butterfly cut it to thinner pieces, essentially making flap steaks out of it. He said they are similar cuts of meat. I'll be trying that out in a few days. BTW, the camera your son used worked really well, even given using it on manual mode. 👍🏻

It was amazing! Yes Wagyu is probably the most expensive beef you will ever buy, but after looking around on their website, it really wasn't as bad as I thought it would be.

Mr. Jones, I think I am being remarkably stupid for watching this the week before Lent. I also have to ask about the camera, because the look of the video is great and the depth-of-field shots is great. Color temperature looks a bit cool, but it's still technically winter so..... (speaking of winter, hope it's been okay for your and yours)

New camera. Sony A6000. We were using manual settings even though the lens is capable of full auto. We did use auto focus however

Any particular reason you would use briquettes instead of lump charcoal?

I can get a more even sear with briquettes because the charcoal is all the same in size where lump is not, plus lump burns hotter, and as close as the meat was to the charcoal, I didn't need a hotter fire.

Great job on the tri tip, but by the looks of the meat and then after checking the site they are not selling authentic wagyu... Looks like domestically raised cross bred japanese cattle "wangus" and a bit over priced for it.
