Collagen (peptides - OTC form) and Gelatin are not the same thing but their building blocks and molecular structures are built from amino acid. They differ immensely in gelling properties, solubility, formation, uses (supplmental add. vs. Cooking agent) but similar in benefits and digestion (due to amino acid).
Yes all sources are healthy it's just depends on where those sources came from for instance if you're going to get sea gelatin make sure it's not from farm fish since they have a lot of nasty bad diseases and a lot of other such plus you need to know the source of the fish and where it comes from because you might be getting your source of fish from a high concentrated area of contamination would you be putting inside your body if you're getting it from a product that They get their fish from a high contamination area
That gelatin might not be great quality. It could come from a mix of animals. I definitely would look for grass fed beef gelatin if you want to add it to your meals vs make a gummy recipe or jello. Does that make sense?

Also enzymes in the milk dont allow the gelatin to bind amything qith enzymes. I learned that when i wanted a pine apple jello. Its impossible to harden with pine apple
awesome stuff! i use grass-fed/halal/kosher certified bovine gelatin in my coffee daily. half the price of collagen while providing the same benefits! i also use it in my keto breads instead of xanthan gum.
@@lindsaycotter thank you! its a game changer. after having loaf after loaf collapse in on itself (AARRGGHH!), i finally came across these tricks to stop it from happening. i regularly make what started as 'Dierdre's low carb bread recipe" but some other YTers have improved on it. i have a final recipe that is perfect, but it still collapsed like 7/10 times, no matter which size loaf pan i used. tricks? -instead of 1/2teaspoon xanthan gum, sub 1Tablespoon gelatin. -also add 1teaspoon baking powder to the recipe. no more deflating in front of my eyes! game changer! i LOVE my gelatin!
