Hes not cooking it there. Thats just for the video. He's heating it on the stove beforehand. Thats just residual heat from using carbon steel.

Ive never had a steak in a reataurant that I couldnt make better at home. Also Guga proved in an experiment that pulling your steak out for an hour to get to room temp doesnt do anything because it takes longer than an hour to get steak to room temperature.

It doesn't heat up the inside at all, only lets the outside become a little warmer and drier so that it gets a better sear. Most people just dont understand the point of letting a steak warm up a little, they just think its so that it cooks more evenly or something

Where you buying your steak bro? I hear people say this all the time, but I've had steak at longhorn steakhouse that is consistently better than any steak I make because the quality of cuts that I'm getting is just not very good. I don't want to spend a ton of money getting good cuts shipped from some site online cause it's just gonna cost more than a full course meal at a restaurant.

1 hour doesnt get a steak to roomtemp tho, serious eats did some tests on this a while ago. it does cook more evenly though.

Every "steakhouse" I’ve been to usually tells you they need 15-20 minutes for your steak. A normal restaurant that has steak won’t care about that steakhouse quality. Most would just cook it with some kinda bbq sauce to offset the lower quality steak and they can get that out quite fast

Most restaurants sous vide their steaks beforehand, then just sear them. At least chain steak places like Longhorn, Texas Roadhouse, etc.

Quality of steak is far, far more important than any cooking method. There is a huge difference between getting well marbled, grass fed ribeye from a local butcher and the absolute shit you get at Walmart.

1) There's a myth some people vehemently spread and defend that if you pepper your steak before searing it, the pepper will burn. Unless you're using a jet burner or a red-hot branding iron as a searing surface, the moisture of the steak will keep the pepper from burning. 2) Considering how many "steakhouse hack" quips Senpai Kai has made in a lot of his steak videos, I'm getting the impression this video's title is part of the running joke.

You can burn pepper and leaving it out to get to "room temperature" is a myth. Plus it's unnecessary. It's been tested several times over. In this one, he had a steak, cut in half. One half in fridge, one out. Starting temp for both was 38f. "After the first 20 minutes-the time that many chefs and books will recommend you let a steak rest at room temperature-the center of the steak had risen to a whopping 39.8°F. Not even a full two degrees. So I let it go longer. 30 minutes. 50 minutes. 1 hour and 20 minutes. After 1 hour and 50 minutes, the steak was up to 49.6°F in the center. Still colder than the cold water comes out of my tap in the summer, and only about 13% closer to its target temperature of a medium-rare 130°F (54°C) than the steak in the fridge."

I've worked at several restaurants and I've never seen this done. Foods need to be kept above certain temps and below certain temps, this raw meat sitting out at room temp isn't a thing or your asking for problems. Stick with quality meat, ridiculously hot pan, add salt, wait and flip. Depends on how you like your steak done depends on timing. Deglaze the pan for some amazing sauce. Steak should taste like steak... This video makes me want to ask for A1

Steaks are ‘NOT’ better at restaurants. If you think that, it’s because you don’t know how to cook one. Restaurants by their nature are flawed for steaks. They must bring you your meal within ‘X’ time, so they cannot bring you a perfect steak. That doesn’t mean they can’t cook a pretty good one.

"Disproved" is one way of putting it. Cooking is a lot like working out where there are right and wrong ways to do it but the little things are down to the individual person and there is no "perfect method"

I agree, I eat steak everyday and I prefer my steak over restaurants. Cheaper to eat at home anyways. The only steaks that have impressed me at restaurants cost over 100$.
