Winter Meals Are About Briases and Pot Roasts in the oven. This easy one pot meal will be the winter pot roast recipe you will have in your Arsenal that you will use over and over again.
This winter you don't need a dutch oven or a slow cooker or an insta-pot to cook this Beef Pot roast recipe. You can use a regular pan as long as you cover it with a lid or foil to keep the water from evaporating.
This is a great lazy one pot meal and it uses pantry items like canned potatoes, canned tomatoes and IQF items like frozen pearl onions. I like using canned items to help in the kitchen and I like using some frozen items like the IQF frozen pearl onions for my pot roast in the oven.
The carrot ribbons are to me like the crown of the dish since it sits on top of the meal and adds that wonderful orange color. I added the potatoes and the onions at the end because I wanted them to retail their color and look good when you plate it.

Recipe for Winter Pot Roast
Olive Oil
Kosher Salt
Butter 1/4 LB = 1 stick of butter
2 tablespoon unsalted butter at room temperature mixed with 2 tablespoons of flour ( set aside)
1 5-6 LB of Beef Chuck ( Salt beef 1 tablespoon of Kosher salt for each pound of beef)
4 Carrots peeled and shaved into ribbons
8 Carrots Chopped 1/2 inch
4 medium yellow onions cut into half moons
2 Leaks cleaned and cut into half moons. Use the white and the light green parts
2 8 oz cans of chopped tomatoes ( do not drain)
2 cans (14-15 oz) of canned potatoes (rinsed of their liquids)
1 bag (12-14 oz) of frozen pearl onions
14-16 oz of beef stock
3 Sprigs of fresh rosemary ( tied with kitchen twine)

Here are some tips for the Pot Roast:
1. Mix the 2 tablespoons of flour and butter together and set aside. This will be used to thicken the liquid. Use a whisk in order to combine and bring to a boil so the starch thickens.
2. Sautee the carrot ribbons in 1/4 LB of butter
3. Use olive oil for the rest of the cooking process
