WSM BRISKET COOK | BBQ GURU | BEAST BASKET

This is a 11.25 lb. brisket cook featuring the Weber Smokey Mountain, THE BBQ GURU, and The Beast Basket from Greg over at THE WOODSHED SMOKE AND BBQ. I used the water pan and smoked the brisket for 4 hours and 15 minutes until it reached a stall at 169 degrees. Then I wrapped it up in 2 layers of foil with some beef broth and Worcestershire sauce and put back on the smoker for 2 and half more hours. Since it was a prime brisket it took only 6 and a half hours to reach an internal of 207.

That was a perfectly cooked brisket Mr. Phil. I love that beast basket as well. I hope Greg's takes his new business to the top. I use my wsm lid to feed the chamber coals as well. I've never used a guru but it seems to work very well. Thanks for the great video..!

Yea, when you have a lot to break down, sliding the charcoal through the door works good. I remember you doing that too. That 11.25 lb prime fooled me. The 17 lb prime I did last year using same cooker same way took 17 hours to reach 205. Go figure. 11-12 lb may be an optimal weight. I didn't even use a fourth of the charcoal. Have a great week.

Hey there Steve. Yes, this prime brisket really turned out nice and didn't take long to cook either. I'm thinking now the 11-12 lb prime may be the optimal cut. I'll try this again in the future and verify. The last prime brisket I did (17 lb prime) the exact same way took 17 hours to reach 205. Thanks and have a great Sunday.

We hit 100° on Thursday. Hottest day for the year in Raleigh. Crazy! At least you got some rain. We haven’t seen that in almost a month. Brisket looked good, but 6 hours?!? Must have been that foil. Next time, do it on your old offset. Just for me. 🍻

Phil N Florence Just got back from Austin, TX after visiting my daughter. HEB supermarkets there have an incredible selection of beef, including trimmed prime briskets. Those briskets were less than half the cost of what we have here locally for choice briskets. I’m bringing a few home in a cooler on my next trip. 🤣

The BBQ GURU works great. I set it on 240 and it held it there once it got there. The blowing rain made it take a little longer getting there but once it got there held it just fine. I just now went out and checked the charcoal in the daylight. There is 3/4 of it left. Didn't even fill up the beast basket. Could've gone 35 hours. The brisket turned out great and Janet's sides weren't too shabby. LOL Glad you like the hot sauce. Like the Carolina sauce which is Spicy right out the bottle, but not on food. Weird the way that works.

That’s impressive- 6 hour prime brisket. Just goes to show the cook is done when the meat says it’s done - I am sure you were thinking at least 12 hours. Greg is a true fabricator - love his channel

Hey Phil! What a relief that cold front has been......hope it stays like this. Wow you had everything going just perfect.......and then where did that rain come from?.....didn't see that coming! Well glad it didn't last long. Gotta love using a Stoker.....set it and get some sleep! Wow.....I couldn't believe how fast that prime cooked......must have been a happy animal. And yes after slicing it and seeing how tender it was....I would say it was a Very Happy animal that had a good life! Nice job and Janets Mac n cheese almost stole the show for me. 👍 Greg does an awesome job with those baskets and I'm guessing you had enough briquettes left to do another! Smoke On!👍 Oh.....did You add any smoke wood chunks? Those briquettes have a nice smoke flavor so you probably don't really need it anyway. Do you notice if you get longer burn or have more charcoal left, lighting your basket on one side as opposed to using minion basket. Nice Demonstration of beast basket. Brisket looked great, but the plating with all those delectable items put the cudegra on it. PIF does it again 😁👍

Hey John. I don't do anything in these cooks the same every time. I like trying different things. I started on one side (where the guru port was) to let the burn move side to side. I saw Greg.do it last week so figured I'd try it. Either way is good. The brisket was very tender. Excellent cut. Janets sides were awesome. Thanks bud.

I’ve had a hard time making myself fire up my pit in this heat, but it is starting to cool off a little and I’m getting excited for some fall cooks. Last prime brisket (17 lb) I cooked same way took 17 hours to reach 205. I just now went out to check the charcoal left over, and it was still 3/4 full. Could've gone 35 hours. Didn't even fill the beast ring up. That mac n cheese Janet made was the 2nd help kind. Still hot enough to burn my mouth. Looks like what's for supper tonight. Didn't eat it yesterday due to being gone. Come on by and help us finish it.

Hey John. Naa, all the xtra stuff isn't necessary. The cooker out of the box will get the job done. All of the gadgetry is for making these videos interesting and different. Some accessories are cosmetic, some are for convenience, and some save time. I like using them just to offer viewers something different. Thanks John.

Hello Fidel, I used a BBQ Guru which is a temperature controller. I had it set for 240 F. It held that temp all the way through the cook until the internal temp reached 207. Thanks for watching.
