I wouldn't deep-fry with olive oil. I'd use a non-flavoried oil that can handle hotter temperatures. Less oily at hotter temps and the olive flavor doesn't go with this dish, if you can even taste it.

There's three things wrong with this recipe: first, the pasta water isn't salted. Second, I'd leave out the peppers, and use a shredded carrot l. Third, way too much sugar. You don't need that much.
Thank you I wash, You Dry!! I made this last night for dinner (04/22/24) and it was so easy to make and tasted very delicious. On recommendation from commenters I sautéed the onions before introducing them to the ground beef. Also I used Sweet Baby Ray’s “sweet & spicy” bbq sauce and paired the meatloaf with mashed potato’s and brown gravy & steamed broccoli. It came out great & I highly recommend this recipe. I’m eating the last of it as I type lol.
