I want to take you on a journey around the world and prove that you don't need a professional degree to cook awesome food, because good food comes from the heart. Every chef has a story to tell which he comes to understand throughout his career. My cooking philosophy was developed from being a busboy, to a dishwasher, to a waiter, to a line cook, to a chef/owner. When u mixed the tarka with the daal, that part was confusing for me im so slow at cooking. Did you mix the tarka and then cook it for a few minutes or was the gas off
Just a little FYI, if you put your tortilla on top of the grease and then sit your metal thing on top of the tortilla is it will make the perfect fried tortilla shell that Taco Bell does it
I make my y passata the day before for about 6 hours of cooking time. Then once cool it goes into the fridge overnight. Next day it comes out for another 4 hours minimum of cooking time to ensure adequate seeping of herbs and garlic. I'm Italian and white sauce....🤬🤬🤬🤬🤬🤬
Coming from the famous Bensonhurst Brooklyn Born and Rasied Italian Neighborhood where we really do cook the BEST Italian food other then Italy. Not a bad job on this dish at all. Nice technique always love making this dish. 👌
I dad this at this one Mexican restaurant they close down after Covid and I had it at the fair. Oh my gosh so good. It is one of my favorites I haven’t had in a long time.
You're supposed to put the flower tortilla in the oil and then press down with the mold. I've done this for years just technique as all wrong what you're doing
@basant_catering I never gotta uneven shake. If you get it in the center. Can I worked at Taco Bell when I was young? Doing it. And now I have my own mode that I buy. And it comes out perfect every time. There's just one of those rare occasion. One side might be a little different than other but with practice. I usually get it in the center and when I put the mood on top. I pushed down. It comes out perfect. If you look that even have a teenager who uses a mode. And he does the same as what I said and his came out nicely even. I did this when taco bell came out with those bulls back in the eighties.
@basant_catering Remember taco bell came out with a bowls bacon eighty four and I was working for them when I got out of the army in eighty six. And I still do it give it a try
