🌸桜コロネ
レシピの注意点は下の方までスクロールしていただくと細かく記載されています。
【6個分】
強力粉(はるゆたかブレンド) 150g
砂糖 10g
バターミルクパウダー 5g
(スキムミルクで代用出来ます)
塩(ゲランドの塩 ) 2g
※普通の塩で代用可能です。
インスタントドライイースト 2g
無塩バター 10g
甘酒 75g
※糀甘酒を使用(マルコメ)
水 30g
【捏ね上げ時間】約25分程度
※捏ね上げ時間は目安です。
捏ね上げ生地のグルテンチェックで見極めて下さい。
【桜生地】
桜パウダー 3g(富澤商店購入)
※桜パウダー3gは事前に水4gでペースト状にして捏ね上がりの半分の生地に混ぜ込む。
※パウダーはメーカーによって色相と彩度が異なりますので、お持ちのパウダーで使用グラム数の調整をお願いします。
(cotta購入の山眞産業 Wサクラパウダーでは10g必要です)
【発酵の目安】
一次発酵 35℃ 50分〜60分程度で生地が2倍ぐらいになるまで発酵させる。
二次発酵 35℃ 45分程度で端の方を指で押して跳ね返りはあって少し指の形が残るぐらいまで発酵
【ベンチタイム】
白生地、桜生地はどちらも3等分して15分のベンチタイム
【成形前の準備】※一次発酵の間に準備
コロネ型円筒タイプ 6本をクッキングシートを巻いておく。
※コロネ型をお持ちでない方は、牛乳パックで円柱にしてアルミホイルを被せて頂くとコロネ型の代用になります。
(サイズ φ22×120mm)
【成形】
1. 15分のベンチタイム後、白生地、桜生地をそれぞれ20cm×10cmに伸ばして、2つの生地を重ねてから手前からくるくると巻く。
2. 両手でコロコロ転がしながら長さを出す。(2回繰り返す)
3. 40cmまで伸ばせたら、縦に2等分にカットする。
4. 断面を下にして、コロネ型を生地に乗せてコロネ型だけをくるくる巻いて生地を巻き付けていく。
5. 最後の生地を閉じて二次発酵。
【焼成】
150℃ 10分
【焼成後のフィリング】
桜あん 200g
【アイシングとトッピング】
①粉糖 適量
②フリーズドライフレーク桜 適量
③ 桜花の塩漬🌸 適量
※桜花の塩漬は水に10分程度浸し、塩抜きをしてからお皿の上に並べ、電子レンジ600Wで20秒づつ加熱し、花が咲いたように乾燥させる。

コロネ型(サイズ φ22×120mm)
固くならないコロネ生地の作り方
①薄力粉はブレンドしない
菓子パンに薄力粉をブレンドするとさっくり歯切れがよく軽い食感の菓子パンが出来上がります。
コロネにも薄力粉を使ったレシピもよく見かけますが、ふわふわのコロネ生地を目指す場合は強力粉のみをお勧めします。
■薄力粉はグルテン形成量が少ないので膨らみが小さく固くなります。
②卵(全卵)を使わない
パン生地に卵はよく使用します。
卵の役割は風味付けや焼き色をつける、パンの老化を遅らすなどで、決してパンを柔らかくするためではありません。
卵の中の卵白に含まれるタンパク質が熱を加えることによって凝固するからです。
逆に卵黄のみ使用した場合は、口溶けのいいふわふわのパンになります。
レシチンの乳化作用でパンの老化を遅らせる効果もあります。
卵(全卵)をたくさん入れるとパンは固くなります。私のレシピでは卵を使用しないか、使用する場合も粉量の10%〜13%程度でそれ以上使っていません。

③成形方法
コロネの成形方法はコロネ型と生地を持ち上げてくるくると巻き付けますが、生地を引っ張り過ぎたり、捻ってしまうと食感の固いパンに、逆に緩すぎると隙間が出来てしまってがっかりする事がありました。
今回、生地を捏ね台に置いた状態でコロネ型だけを生地を押さえ付けずゆっくり優しく巻くことで、失敗しない巻き方で作ってみました。

🌸 Sakura Coronet
For 6 pieces
150g bread flour (Haruyutaka blend)
10g sugar
5g buttermilk powder
(Can be substituted with skim milk)
2 g salt (salt of Guerande)
(Ordinary salt can be substituted.
2 g instant dry yeast
10 g unsalted butter
75 g amazake
Use malt sweet sake (Marukome)
30 g water
Kneading time] About 25 minutes
The kneading time is a rough estimate.
Check the gluten in the kneaded dough.
Cherry Blossom Dough
3 g cherry blossom powder (purchased from Tomizawa Shoten)
*3g of cherry blossom powder is made into a paste with 4g of water in advance and mixed into half of the kneaded dough.
*Please note that the hue and saturation of the powder varies depending on the manufacturer, so please adjust the number of grams used with the powder you have.
(Yamashin Sangyo W Sakura Powder purchased from Cotta requires 10 grams.)
Fermentation time
First fermentation: 35℃ for 50 to 60 minutes until the dough doubles in size.
Second fermentation: 35°C, 45 minutes, until the dough bounces back when pressed with a finger at the edges and a little of the shape of the finger remains.
Bench time
Divide the white dough and cherry blossom dough into 3 equal portions and bench for 15 minutes.
Preparation before shaping
Prepare 6 cylindrical coronet molds by wrapping a cookie sheet around the coronet molds.
If you do not have a coronet mold, you can substitute a coronet mold by using a milk carton to make a cylinder and covering it with aluminum foil.

Shaping
1. after 15 minutes of bench time, roll out the white dough and cherry dough to 20cm x 10cm respectively, overlap the two doughs, and roll them up from the front. 2.
Roll out the dough with both hands and roll to length. (Repeat 2 times) 3.
3) Once the dough has been stretched to 40 cm, cut it lengthwise into two equal pieces. 4) With the cross section facing down, roll the dough into a rectangle and cut it into two equal pieces.

5. close the last dough and put it into the second fermentation.
Baking
150℃ for 10 minutes
Filling after baking
200g cherry blossom bean paste
Icing and topping
1) Sugar powder
2) Freeze-dried flaked cherry blossoms
(3) Salted pickled cherry blossoms 🌸 as needed
Soak the salted cherry blossoms in water for about 10 minutes to remove the salt, then place them on a plate and microwave at 600W for 20 seconds at a time to dry them as if they were blooming.
Molds used
Coronet mold (size φ22 x 120mm)
How to make coronet dough without hardening
(1) Do not blend light flour
2) Do not use eggs (whole eggs)
On the other hand, if only egg yolks are used, the bread will be melt-in-your-mouth fluffy.
The emulsifying effect of lecithin also delays the aging of the bread.
If you add a lot of eggs (whole eggs), the bread will become tough.
(3) Shaping method
The way to shape a coronet is to lift up the coronet mold and dough and roll it around.
This time, with the dough on the kneading table, I tried to roll the coronet mold slowly and gently without pressing down on the dough to avoid making mistakes.
