Yudane bread is characterized by its chunky texture, unique umami taste, slow aging, and long-lasting deliciousness. The sponge dough method is a two-step process of kneading the dough. First, some of the flour to be used, water, baker's yeast, and sometimes sugar and other auxiliary ingredients are mixed together and fermented. The remaining ingredients are added to this sponge dough and kneaded, followed by further fermentation and baking. Compared to the straight method, this method is characterized by its greater volume and softness, and it is said that most commercial breads in Japan are made using the sponge dough method.

Your loaf looks gorgeous, specially the bright green colour. May I know what brand of matcha powder you used? The one i have doesn’t produce nice green colour but instead it’s dull green 😢
