Vegan Air Fried Eggplants with Pizza Toppings
- Combination Pizza & Bulgogi (Korean BBQ) Pizza
* You can use an oven or a pan with the lid instead of an air fryer.
INGREDIENTS
2 Eggplants (Aubergine)
Salt and Pepper
1 - 2 TBSP Olive oil
For The Bulgogi (Korean BBQ) Toppings
1 Cup Plant mince
1 Tbsp Corn starch
1 tsp Garlic
1 Tbsp Soy sauce
1 Tbsp Maple syrup
1 Tbsp Sesame oil
1 tsp White pepper
Vegan cheese
Red onion
Jalapeno
Radish
Green onion
For The Combination Toppings
1/2 Cup Tomato sauce
Vegan cheese
Vegan sausage
Red onion
Olive
Jalapeno
PREPARATION
1. Slice the eggplants. Add some salt, pepper and olive oil. Air fry for 15 minutes.
2. Marinate vegan meat crumbles with corn starch, chopped garlic, soy sauce, maple syrup, sesame oil and pepper.
3. Place the pizza toppings on the eggplants and cook with the air fryer for more 10 minutes.
4. Enjoy.
