I feel like out of the normals, Jamie is the one that loves food the most, and approaches every challenge with the excitement coming from that. Mike tries to do things with ''winning'' in mind, and Barry is far too ''hipster'' and gimmicky.

9 times out of 10 frozen peas are better than "fresh" ones because they are flash frozen on site. The exception is if you buy them at a local market directly from the growers.

I'm not a huge fan of the perfect grill marks, actually. It makes it look kinda cheap. Prefer it just in a pan, with a knob of butter and garlic to finish. Ribeye is my fav, for sure.

What you want is a even outer crust, which you can get by patting the seasoned steak dry then frying it in a hot cast iron pan with the aforesaid knob of butter. I like to throw a sprig of fresh thyme into the pan for a bit once the butter's hot, but that's not to everyone's taste.

Chef Jack was so cool and chilled out. He spoke about what he knew with absolute gentle authority. He was genuine with feedback but kept things positive and encouraging. Sorted always has the best guests.

I think what this episode shows is even if you are a chef you never stop learning. That gentleman probably have spent as much time perfecting steaks as James learning to cook literally everything else together. Of course he could cook an excellent steak before, he's a chef. But the point was - to cook a perfect steak, not just a good one.

Yeah not sure I agree about the grill marks myself either but not the point, judge very plainly laid out what the judging criteria was and in competition it's up to them to deliver the expected plate as best as they could. that said, a proper sear and crust on a steak is far more brilliant than the grill marks imho

@@dsolomon It honestly works. Keep adding butter and they think it's coming from the meat instead of a topping. (have you seen you highest quality chefs cook high quality meat?). They still add a fuck ton of butter that no normal sane person would put cooking their own steak. It's how restaurants get the more buttery flavor. Not from the meat, it's from the butter, lol.

I love a good medium rare Ribeye. I love the texture and marbling. Jaime and james, great battle!! Would love to see a 2 v 2 battle with 1 chef and 1 normal versus another chef and a normal with the remaining normal as the judge. Losers have to be at the beckon call of the winners for 3 days :)

It's not their real kitchen. They don't have a sink with running water either. So maybe help get them more subscribers, buy their books and we can get them a fully functioning kitchen.

couple hundred just for a halfway decent extractor. not including labour. considering those what 15 foot ceilings.

They do have a real kitchen, this is just the filming station. If you watch older sorted videos (when they still did FridgeCam), you can see it sometimes (unless they moved studios or something). It's just a lot easier to film in the front view with the 3 tables than it is the other way, since it is a smaller area. But to answer your question, from my limited knowledge and google searches, it's about a 1000 USD for a good hood and 40 USD per fan (you'll most likely need more than one I'm assuming). That's not including the actual ventilation system and installation process.

Love myself a crust, HATE diamonds. The diamonds always taste bitter to me even when I cook them lower. A nice golden brown crust with a rare or medium rare middle. 😍

The diamond grill marks are really a sign of an overcompensating chef. They look pretty but add absolutely zero to the dish and leave a lot of great char flavor out of the dish. A good crust beats diamonds everyday. Ribeye med rare with a great cust is best steak in the world simple seasoning salt pepper garlic finished off with butter.

The presence or absence of "grill" marks when you're not actually cooking on a grill is a utterly meaningless. They're pure ornamentation in that instance.

I worked for HEB for a year, learned a LOT from their demo cooks about cooking steaks, managed to get my 9YO nephew (at the time) to eat a steak, medium, WITHOUT KETCHUP!

I like seasoning with salt, pepper and maybe garlic powder atleast leaving it half an hour before cooking, if its something like a sirloin I seal both sides then render the fat on its side and finish by basting it with butter and herbs/spices but I love reverse seering too
