These vegan croissants are made without any animal fats but with a high-quality vegetable margarine.

Recipe:
Tradition flour (T 65 ): 500 gr
Bread flour (T 45): 500 gr
Salt: 18 gr
Yeast: 50 gr
Sugar: 150 gr
Water: 500 gr
Touring: Add 1/3 fats for touring.
For 600 grams of dough, add 200 of fats for touring
