It's July in Canada and it's flippin' hot out! This not-so-distant cousin of the Piña Colada, the Chi Chi, tropical cocktail that reached peak popularity during the 1970s and into the early ‘80s. I used to make these all night long back then, but today, no one ever orders them. Don’t know why? It's perfect for afternoon sipping in the summer sunshine. Stay cool!

CHI CHI COCKTAIL

IN A SHAKER COMBINE:
2oz (60ml) - VODKA
4oz (120ml) - PINEAPPLE JUICE (FRESH PRESSED)
1oz (30ml) - CREAM OF COCONUT
TOSS IN SOME ICE AND SHAKE VIGOROUSLY UNTIL WELL-CHILLED.
STRAIN INTO A HURRICANE GLASS OR TIKI MUG OVER CRUSHED OR PEBBLE ICE.
GARNISH WITH A PINEAPPLE SLICE AND A COCKTAIL UMBRELLA.
