Chicken Breast with Spicy Sauce

雞胸肉 Chicken breast-1片
砂糖 Sugar-1小匙
鹽巴 Salt-1/2小匙
清酒 Sake-1大匙
太白粉 Starch-3大匙
蔥 Scallion-1支
薑泥 Ginger paste-1/2小匙
蒜泥 Garlic paste-1/2小匙
白芝麻 White sesame-1小匙
砂糖 Sugar-1大匙
鹽巴 Salt-1/4小匙
醬油 Soy sauce-2大匙
米醋 Rice vinegar-1大匙
辣油 Chili oil-1大匙
花椒粉 Hoajiao powder-1/2小匙
洋蔥 Onion-1/4個
堅果 Nuts-1大匙
Preparation
(1) 1 chicken breast, cut them into slices like you slice sashimi
(2) Marinade
*1 tsp of brown sugar (or granulated sugar)
*1 tbsp of sake (mix it well first)
*1/3 tsp of salt
*Marinate for 10 minutes
(3) Sauce
*2 stems of scallion
*Cut the white part into minced pieces
*Cut the green part into rings
*Grind garlic into paste (about 1/2 tsp)
*Grind ginger into paste (about 1/2 tsp) (You can remove the ginger skin with a spoon first)
*1/4 of onion, cut against the grain into slices (You can replace onion with your preferred vegetables)
*Soak in water for 3 minutes (to remove the pungent flavor of onion)
*1 tbsp of nuts, chop into pieces
*Combine: Add all scallion into a seasoning bowl
Add 1 tsp of white sesame
1/2 tsp of garlic and ginger paste
1 tbsp of brown sugar
1/4 tsp of salt
1/2 tsp of huajiao powder
1 tbsp of rice vinegar
2 tbsp of soy sauce
1 tbsp of chili oil
(4) Sprinkle some starch on the seasoning plate
(5) Put the chicken slices in and coat them with starch
Instruction
(1) Put chicken slices into boiling water and cook them through
(2) Put cooked chicken on a sheet of kitchen towel or cheesecloth
(3) Cool the chicken slices down in ice water
Plating
(1) Drain the onion slices that are soaked in water
(2) Put the onion slices at the bottom of the dish
(3) Put the chicken on top
(4) Drizzle the sauce on chicken slices
(5) Finally, garnish it with some nuts
