I've been obsessed with muffins ever since I met them in Canada several decades ago, and this is a special recipe that I created through trial and error.
I'll also show you how to get crispy and flaky muffin tops without making streusel.
Banana muffins that are very easy to make and have been requested repeatedly by my family. It has a cinnamon flavor and goes well with coffee.

+Ingredients (for 6 muffins)++++
60g cake flour
60g bread flour
※You can substitute 120g (1 cup) of all-purpose flour.
1 tsp baking powder
1/2 tsp baking soda
1 egg
50g (1/4 cup) sugar
1/4 tsp salt
3 tbsp vegetable oil (I use olive oil)
2 tbsp yogurt
260g (about 1 cup) mashed ripe bananas
1 tsp rum (vanilla is fine too)
【topping】
30g (about 1/4 cup) finely chopped walnuts
1 tbsp sugar
20g (1+1/2tbsp) melted butter (salted or unsalted)
1/2 tsp cinnamon (adjust the amount according to your taste)
●Bake in an oven preheated to 190℃ for about 25 minutes.
