Ever dream of renting a space with a kitchen in Mexico just so you can cook all the fresh fish you can eat? Rick lives the dream at Hotel Villas Carrizalillo in Puerto Escondido. First, he peruses the town market for inspiration and ingredients from heirloom tomatoes to the local tuxtla chiles. Then he joins a resident expert to take him spearfishing off Roca Blanca Playa, one of the prettiest beaches in Mexico, for the freshest possible catch for his feast. And what a feast it is! Rick takes one robalo and turns it into an aguachile (a spicy ceviche appetizer), a brothy soup with chayote and beer, and pan-seared robalo with a tomatillo -pumpkinseed sauce. All from a small kitchen at the villas, a sharp knife, a couple of large pans and blender! Paradise indeed!

It's fun cooking in random rental kitchens. I go on trips with my parents where most of our food is just what we whip up at the rental from local ingredients, very fun.

Agreed! I enjoy the limitations of having a bad selection of pots/pans, bad knives etc. it’s fun!

As a mexican myself, I've loved Puerto Escondido's rugged and true essence for some 30 years. I really hope this vid doesn't spoil it all 😢

It's not really spoiled, but now that it is known as a world class surf break, it is much bigger and busier that it was last time I visited some thirty years ago. I don't think Rick's video will spoil it.

Appreciated Rick for decades. Thank you!..Puerto Escondido has been in my mind as a place to spend a month since I heard the surfin called The Mexican Pipeline a decade ago...I love the ocean, Mexican people and Mexican food. Viva Mexico 🇲🇽

Wow that looks like a wonderful day spent. Strolling to the local mercado, catching your own fish! Then coming home and putting it all together for a small group of people you care about. All this while taking in the beautiful coastal view and just the simple vibe of a small mexican beach town.

Man Rick , I love how you show the locations in Mexico and the regional fruits and vegetables. My wife and I always hit the mercado when visiting Mexico. I love to cook. Especially comida Mexicana. 😊😊😊😊

@meatgravylard are you brain damaged? 10 years later from when it was shot and guess what... he still looks great for a 70 year old. Doesn't matter when it was shot. As I said, man looks great for his age.

@@meatgravylard You're right. We were staying at the Villas, and it was an exciting time for the owner, Amy, to have the famous Rick Bayliss there. She asked us to move for the filming into another villa, as ours had a better ambiance, she thought. But our kitchen was too small for the camera crew and so we stayed put, although they did borrow our dining table for the video. Nice to see the Mercado again, and the beach. Puerto used to be our winter home. Miss those happy days.

I love this episode. Another slightly unknown yet beautiful location in Mexico to explore. Whenever I go on vacation I almost always have a place that has a kitchen because, like Rick, I also like to cook. :-) It can be a challenge cooking in a kitchen I'm not familiar with, it kinda feels like camping and I take a lot longer. However, nothing beats a home cooked meal, even on vacation. Thanks Rick!

Inspiring video. I am off to Benito Juárez mercado in a moment to buy some of those tomatoes! I retired here and spend my days cooking or walking my poodle Tyson on the usually deserted Naranjos Beach nearby. Next trip to P.E. be my guest at my new AirBB Villa Laureles Zicatela in Brisas de Zicatela. The penthouse apartment kitchen had a breathtaking ocean view. Exposing the many wonderful experiences that Oaxaca has to offer is appreciated. The new superhighway is opening soon making trips to Oaxaca just under 3 hours.

Robolo ie. Snook used to be called soap-fish long ago because of the soap like taste it had when it was cooked with the skin on. Nowadays it is one of the most sought after fish when skinned and cooked.

Watching this on Christmas. What is the name of the pungent garlic? We have a local organic farmer that grows garlic. If they don’t grow it, I’d like them to consider doing so. Enjoy your joyous holiday.

Travel chefs could learn from this video how to present. The fishing story was well done, beautifully presented, engaging, but also succinct. You can just imagine or go watch their videos of some other "celebrity chefs" who would take 10 minutes showing us them goofing around in the boat, with a bouncy camera, and just wasting everyone's time.

Every home I've stayed in in Mexico might be sketchy on havng pots, knives etc. but there's ALWAYS a licuadora(blender).
