Wow! Quick and easy! Love the pot! Would love one but empty they are pretty heavy and once you add ingredients, I wouldn’t be able to lift it! Lol! Not safe for the elderly! Can see myself making this in my stainless steel pot! Yum!
With all that salsa verde you made you Can make a chicken enchilada casserole. You will need chicken, corn tortillas your salsa 1 can of rotel, 2 bags sharp cheddar 1 bag mozzarella cheese 🧀 and to add a little spice 2 jalapeños peppers roasted and 2 family size cream of chicken….. you boíl chicken after cooked shred.. in a pot you add your cream of chicken your drained Rotel your salsa verde and your 2 jalapeño peeled and chopped. If to thick add a little milk you want it creamy not to thick or thin. In hot oil you fry your tortillas not to hard when done in a casserole dish.. place fried the first layer of tortillas then spread your enchilada mixture on top mix 1 sharp cheddar cheese and 1 mozzarella together. Then add on top of your enchiladas then another layer of tortillas on top then enchilada sauce then cheese again. Repeat again. Kinda like a lasagna but instead of pasta it’s your tortillas. When no more enchilada salsa left. Your last bag of sharp cheddar cheese add to the top spread all over til covered. Then pop that baby in the oven till your cheese is melted and you got chicken enchilada casserole. You talking about good we love it. You can add as much cheese as you like. Gonna have my wife make that, I’m horrible at making soup. Another 2 great soups you should make, maybe you have and I missed it; are STUFFED PEPPER, and CHEESEBURGER soups. They are both delicious and you can find a variety of recipes online. We just pick one and modify to our likings.
