Packed with whole oats, pumpkin puree, almond butter and flax seeds, these healthy pumpkin breakfast cookies are jammed with nutritious ingredients, and yet they taste like treats! Serve them as a quick grab-and-go breakfast, pack them as a school snack, or eat them as dessert. Or, better yet, hide them from your kids and save them for yourself (I won’t tell). The cookies have a delicious pumpkin spice flavor and are gluten-free, vegan and can be made nut-free.

Scrumptious! We don't have access to any pre-made pumpkin puree in Australia but I can make my own or roast some sweet potato and use the flesh from that instead. Will definitely give these a go though, thanks! :)

Thank you! I find that peanut butter overpowers the spices in these cookies so prefer almond butter, but it's a preference!

thanks for the recipes! easy to get ingredients except the sunflower butter. Wondering, if i freeze the after baked cookies, how long will it last? thanks!

Hi Mike! You can swap out the sunflower butter for almond butter. The baked cookies can be frozen in an airtight container or bag for up to 3 months. I hope you enjoy!

Not sure about the killing nutrients thing, some studies found very high nutrients or even higher than other methods. But depends on what nutrient exactly afaik

The cookies can be refrigerated for 1 week or can be frozen for several months!!

Thank you so much Kelsi! I actually don't have a single brand of maple syrup that I use (it changes according to what I can find). You just want to make sure that it's 100% pure maple syrup. Lately I've been using Brad's Organic brand. I hope you like the cookies!

Hi there, I haven't tested these cookies with eggs instead of nut butter. However, I would start with 1 egg. If the mixture still seems too dry you can add a second. Let me know if you give it a try!
