For years, I blanched my home grown green beans before freezing them--and was always disappointed by their flavor and texture. (Blanching is when you plunge them into boiling water and then into ice water to stop cooking.)
Then I discovered that frozen green beans look and taste better if you don't blanch them first. And through my blog I've heard from dozens and dozens of skeptics who've been won over by actually trying this method for themselves:

In this video I show you my super-easy method for getting them ready for the freezer. You just cut up your green beans, put them in a ziplock freezer bag, and extract the air with a straw. It works for either garden beans or ones you've bought at the store.

I agree, I have stopped blanching all my veggies prior to freezing years ago. I just wash and air dry, then use my machine to seal in storage bags. I do the same with tomatoes, just remove the blossom end and freeze whole. They are perfect all year long. This week we froze corn after removing from cobs, and also cauliflower. Great to have these wonderful veggies all winter long. Thank you for your video. Have a great day.

I absolutely LOVE this! I also do this with my tomatoes basically. I just pop them into the freezer whole for about an hour after cooking them, and then pop them into a freezer bag. I'm definitely going to try this!

I don't even cook my tomatoes. I put them in the freezer whole on a tray. Once frozen I put them in ziplock bags. I use them in soup in the winter.

This is the first year that I was wanting to freeze my extra veggies that my garden is producing because I do not live near anyone I know to share with so I wanted to freeze the veggies especially my Green Beans, but did no have a clue as to how. I always assumed this was complicated. So, thank you!!!

We do love it, like I said, but if you haven't had beans like this before, you may want to freeze one or two bags and then try them. They are best for a longer cooking with bacon and onions (I have a recipe on my blog) or adding to soups and stews. I'm also testing out some other cooking ways (like roasting), so stay tuned!

One trick I found for removing air from bags is to submerge them in water up to the opening. The water pushes all the air in the bag out opening and gives the contents a "vacuum sealed" result. Thanks for the video!

Success! I used yellow string beans and the appearance, texture and flavour is far superior than my previously blanched and frozen beans from past years. Thank you so much for the tip! Wish I could post a pic of the difference n appearance. You could probably even use these in three bean salad without cooking.

Oh wow! The straw idea is PERFECT!!! We harvested some green beans just this morning and I was looking on RU-vid on how to store them. I saw the vids with blanching but wasn't too excited. Thanks for the great idea & info and I can't wait to try it:)

@@AnOregonCottage if you have a gander at my channel, you can see what i'm doing to increase production on a small scale. i realize i have become a fool time farmer, but if this fool has food, that is good enough. i'm adding a lot of videos right now on my drip system to include a tank fertilizer that flows in the drip system to the plants and will be updating it. this is my first serious forte into gardening. i need all the help i can get

I flashed froze my beans before freezing. Just chopped them to size, laid them on a cookie sheet and put in the freeze for a few hours. Took them out and bagged them then back in the freezer. They were outstanding!

genius! will try this and love the straw idea! like space bags but you are the the vacuum lol. don't think it would be necessary to cut off ends though. seems like waste :( maybe the very top stem tip :) thank you!

I never blanch mine either. They go right from the vines to freezer bags then in the freezer! They freeze GREAT that way! Kentucky Wonder is my favorite.

well...I'm sitting here with a bowl of fresh picked green beans. Not quite enough to spend time canning so I'm going to try freezing until I have enough to fill a canner....thanks for the info.

Some people suggest flash freezing beans (Spread the beans on a baking sheet in a single layer, and flash freeze for 30-60 minutes.) Why do you skip that step? I am all set to freeze some Asparagus Beans, but I'm going to skip the flash freeze after seeing your video. I washed the beans yesterday, so they are dry, except maybe some fridge moisture. I normally wash veggies, since birds often sit on stakes in the garden and leave 'deposits.' I'm also next to a swamp and get lots of bugs and unfortunately have to use insect sprays. Summer is here, so I will also start using Disease Control spray.

The flash freeze is needed when you blanch the beans, as they are partially cooked and will just stick together if you put them in a bag from blanching. That's why I emphasize drying the beans thoroughly if washing, because we do skip the flash freeze. The beans don't stick together in the bag if they are put in dry.

Wayne Lynch, Please be careful putting up veggies that have been sprayed with chemicals. If you spray chemicals then I suggest that you must blanch them to kill of the chemicals.

@@marysekely9571 My chemicals say veggies can be harvested the next day, but I usually wait at least 2-3 days, plus I wash them w/dish detergent.

@@ses9618 Yes, if you washed them in hot water they would partially thaw. I mostly use the from frozen, though. I don't steam them very often.

Seems like the sentiment is about 5 to 1 that we should blanch. I don't even like the sound of that. I'm going to give it a shot without the blanching. Loved the straw trick. I've done it and they are in the freezer now. Note to self, don't grow as mean beans next year.

I too diced up and froze beans, carrots and tomatoes without blanching.. worked great for stir fries and curries, but I used them within a month though. Also the beans and carrots were pretty dehydrated from sitting in the fridge, so maybe that helped, coz when I froze a batch of fresh carrots, I got Ice crystals.

Amazingly easy. How long it lasts in the freezer? Is it better if I use food saver vacuum packing?

Yes! We've eaten some that are 18 months old and still find in soups or long-cooked (15-20 minutes). Some people really like the vacuum packing - if you have one, try and see if it's worth it for you.

Like the straw trick. You didn’t mention about stringing or if the beans you were freezing were stringless. We started raised bed organic gardening this year and ordered what we thought were stringless - stringing beans is like a dull tooth ache to me - but we found we needed to string them anyway. Any thoughts on stringing and stringless beans?

Shoot - "stringing stingless beans" That should not be a thing for sure. :) I don't mention it because I only grow filet beans (Emerite and Fortex pole, Jade bush when I grow them) and I've never had strings with them. Maybe pick the ones you have earlier when they are thinner?

muneca0509 I use frozen produce throughout the following year and try to use them within a year. I have often found bags that are a year and a half old (or more!) that look a bit tired, but I've used them in soups anyway and they're fine. Hope that answers your question! (PS, some things like broccoli suffer a bit more with time, but things like green beans seem to last longer)

Im guessing my mom and my sister would yell about not blanching the beans. But Im not going to blanche. When I thaw them out I will be using them in a pressure cooker. at that point the beans are perfectly eatable. Nice tip on the straw thanks ,, Steve

I did this last year and during the winter months (when it was time to steam them for eating) I found the beans very rubbery/chewy. Does this happen with others as well or do you cook them a different way?

It depends on the cooking method - a quick boil of frozen beans always result in a product our family doesn't enjoy. But we've found roasting, long cooking (with bacon and onion!), and in soups and stews these beans are great. I do recommend everyone does their own test with just one bag frozen a few weeks first to see if you like this method with your preferred cooking ways than traditional blanched beans.

I'd like to see what they look like after freezing and defrosted. This is such a welcome video. I have pounds of yellow (wax) string beans ready to go and want to try this. Is the look and texture compared to commercial frozen defrosted string beans?

Hi, I really like your no blanch method. We blanch and freeze a lot of beans, they are one of our main vegetables during the winter. I was taught that you had to blanch them or they would lose their flavor and texture. There is an reference in an article on the Penn State Agricultural website about a woman who didn't blanch her beans who ended up with a freezer full of mushy flavorless beans. There are of course many other factors which could have made them mushy and flavorless even if she had blanched them. I just wanted to know from your experience how long you think the unblanched beans would last? Would they last the same amount of time as blanched? I really liked your tip about drying the beans well to reduce ice crystals and the straw to remove air. :0)

+Michael S Yes, that's what I'd always read, too, Michael, but what I always had after blanching and freezing were flavorless and mushy/squeaky beans that my family hated. So what did I have to lose? We like these a lot better, obviously, but there have been some commenters on my blog who haven't, so it may be a preference issue. I'd suggest you trying a bag unblanched - freezing for a week or so and then cooking to see if you like it. They aren't like fresh, so I slow cook or add to soups/stews, but they're a lot better to me this way - not to mention a lot easier! We've eaten them up to a year later and they're still fine. Hope that answers your questions!

+AnOregonCottage Thank you Jami that was a quick answer. I have a big basket of beans to process today. I will not blanch them. I am keeping my fingers crossed because blanching, cold water baths and drying the beans is definitely tedious and time consuming. This way the beans can be picked snipped bagged and frozen immediately instead of waiting for enough time during a busy day to blanch. So many things we are taught are based on what others were told but never actually tried.

They are like home-frozen green beans - I don't cook them like fresh. I add them to soups, roast them or long-cook them with bacon and onions. We love them and they are better than home-blanched frozen beans to us. (I think commercial frozen beans are flash-fozen to be firmer or something - not sure how they do that…).

Another trick is to fill your sink with water. Put the bag of beans into the water up to sealing area and the water will force the air out of the bag, then zip it shut.

unconventional thinking. love it. i was thoroughly convinced that blanching was unnecessary, which led me to this video. thanks for the effort. i will definitely be trying this approach for the coming winter. one question: why trim the beans before storing them? is there a reason for this or just preference?

Yes, that's why I cook them from frozen by roasting them, long cooking with bacon, or adding to soups and stews. Not boiling and steaming.

You don't want to defrost frozen beans since they are just pretty limp then. I use them frozen into soups and stews and for longer cooking with onions and bacon. I've just started experimenting with roasting them from frozen and when I've got it perfected, I'll be posting the recipe on my blog. :)

Never had any issues regarding texture or bite with blanched beans. Only rubbery and squeaky when you undercook them. Note: sorry AnOregonCottage i somehow deleted your reply. Thanks for commenting. 👍

With this technique, I can just cook them lightly and they don't have that texture I don't like, so it works for us. :)

I also freeze snap peas without blanching, which I wrote about on my blog and I regularly freeze corn that way, too, though I also like it frozen cooked to be ready for salads. I cut up and freeze all types of peppers to use in soups and stews all winter long, as well. These are the types I've tried so far.

No need to go to all the trouble of washing/drying the beans before freezing ……I just wash them before I cook after freezing. 🙂

There was no canning then- it was invented in 1809, but not widely used until 50 years later in the US. People ate seasonally and when it grew you ate it and when it didn't you ate dried or salted foods. People also didn't live as long, lol.

I usually don't because I grow them and harvest them myself. If there are any that got dirt on them, I just wash those. Some commenters have concerns about bugs or birds on the beans leaving something, but this is just not an issue with me. I do show how to wash and dry them if you want to (I think there's a discussion of this over on my website…).

Yes and they didn't work as well. I found blanching just 1-2 minutes helps, as well as not defrosting them before using (they turn to mush).

I only grow stringless green beans because those are the only kind I eat, so no. :) If you see your beans have strings then string them.

Most modern beans don't have tough strings anymore and I only grow filet beans that don't have strings - but go ahead and string them if you like them that way!

I grow half runners which I have to string. Sometimes I grow those big blue lake beans and not to many of those half to be strung either I live in WV and am just used to stringing my beans like my grandparents and parents.I have never heard of filet beans but will try them out next year.

Oh, do try them - I think you'll love them they are so tender, even when picked at a bigger size! My favorite varieties are Emerite (which I wrote about on my blog I like them so much) and Fortex. They are both pole beans, which is all I grow now. There is a bush variety called Jade Green I think that I've tried in the past.

Like any frozen vegetable, the texture is changed. But I've used these in soups, stews, long cooked them with bacon, and roasted them in the oven and they are great!

Looks like the easy way out, but I'll stick to blanching like with so many other vegetables it is the only way to properly store when freezing.

DID NOT WORK for me. I tried this with green and yellow wax beans. Froze them then cooked them 30 days and 60 days later. Had a really odd taste. Even tried stir frying tasted odd. Checked the peer reviewed literature and found out that beans release an enzyme if not blanched. So it's back to blanching for me...has never let me down.

Peg P that is correct. But some people don’t want to spend the time to blanch. I like it, and end up with crispy garden fresh beans after thawing frozen blanched beans in water. Not sure what they’re doing wrong to get rubbery beans. Someone might know.

Ours are not mush, but it's definitely something to test and see if you like the results. If you don't, don't do it again.
