In today's episode, I want to show you how to make Oleo Saccharum at home using four different citrus zest. This Oleo Saccharum recipe is simple and uses grapefruit, orange, lemon and lime zest.
But first, what is actually an Oleo Saccharum?
The word itself means oily sugar or, perhaps more appetisingly, sugared oil.
Oleo Saccharum is an ingredient in cocktails and punches that was commonly used in 19th-century bartending to provide an elegantly citrusy flavour and aroma to alcoholic beverages.
You can make Oleo Saccharum from many other fruits and not only citrus. Of course, every fruit or peel has a different level of oil or not any at all but still possible. The sugar will break through the fruit and, while melting, extract any oil and flavour. This will leave you with reach and delicious fruity sugared syrup.

I made separate Oleo Saccharums from lime, lemon, orange and banana the other week. In 24 hours banana gave the most liquid but lime gave basically nothing but moist sugar... But I used plastic bags instead of layering in glass. Great pointers from this video for next time!

Limes are not very good for oleo. I usually try to get bigger and thicker peel limes. You can try also adding grated lime zest for more flavour.

Yes, you can! They won't look pretty as curvet peel, but they will be edible as candid peel. Cheers!

It is when you boil water and add ingredients into another container floating on top of the boiling water. You basically warm and dissolve sugar, for example, or other ingredients without diluting or mixing with water. It is an excellent way to extract flavours and keep 100% of the taste. It is basically the old method before the sous vide takes over.
