鹹蛋黃 Salted Egg Yolk 4顆(pcs)
玫瑰露酒 Mei Kuei Lu 少許(a little bit)
水皮 Purple Pastry:
紫薯粉 Purple Sweet Potato Powder 10克(g)
豬油 Lard 15克(g)
低筋麵粉 Cake Flour 100克(g)
糖 Sugar 15克(g)
水 Water 40克(g)
油皮 White Pastry:
豬油 Lard 50克(g)
低筋麵粉 Cake Flour 90克(g)

不用放雪櫃,室溫可放一星期。 預熱焗爐後關火,放入翻熱。

Not too sweet. I don’t think butter can achieve the same texture, but you can try, or try Crisco All-Vegetable Shortening

Hi the Bic kitchen Taro spiral mooncake i Cook taro filling already. But i dont like put whipping cream not healthy can i skip it replace put fresh milk can or not . Condensed milk can i replace sugar o. Now i waiting u reply me ok thanks.

烘焙店有售賣豬油,亦可用固體菜油代替。 材料份量可按比例加減。

你的很美!請教一下,我做的有點破酥,首先1)油酥很沾手,不成團,難以分成等份,是正常嗎?因為太沾手,我無法控制,我就加了多點粉,也不是加太多我想,最後也有點沾手的,但較好控制 2)油皮是軟,那油酥是要那個程度呢?油皮要搓至有薄膜嗎?做油皮如果太用力,會出筋/ 起筋嗎,會不好嗎? 十分感謝你解答,我實在是懊惱我的為什麼不美麗,很傷感呢~

油酥只能用撳,不能搓,因手有熱力會令佢溶,無晒乾粉成糰就可以。一定要先做油皮,差不多完成鬆筋,才開始做油酥。

油皮用柔力搓至黐手唔黐枱就可以(記得水不要全放,留少部份作調節),不用起薄膜。

若油酥溶了而黐手,可放回雪櫃雪硬,不是加粉。

Actually you need more purple pastry then the white pastry. After you baked, the white pastry melts. And, It is absorbed by the purple pastry, to form the layers like 🥐. In my recipe, I have 180g of purple pastry and 140g of white pastry. For 50g of white pastry, you need - 18g of lard - 32g of flour For the purple one, you will need at least 65g. The ingredients are - 3.5g of purple powder - 5.5g of lard - 36g of flour - 5.5g of sugar - 14.5 of water

可以,不過要特別小心放水量,多了會好黏手。中速,搓至麵糰光滑軟熟(黐手唔黐枱)。

Gel coloring or powder coloring shall be okay, I used artificial coloring as the purple yam powder I brought is not purple enough

烘焙店有售賣精煉豬油(加拿大產),另有人會用固體菜油(白油)代替。
