Egg Foo Young 芙蓉蛋 is an authentic Cantonese egg cuisine. This video highlight seven primary difference between Egg Foo Young and the western style omelet.
1. Egg Foo Young has a different set of ingredients in the egg mixture.
2. Use only vegetable oil to prepare Egg Foo Young.
3. Pan-fried the egg surface until golden brown
4. Use more oil to prepare Egg Foo Young.
5. There is more than one way to prepare the egg mixture.
6. Pan-frying the Egg Foo Young until it puffed up
7. Serve the Egg Foo Young with (or without) the brown gravy.

The Legend
Legend has it Egg Foo Young was invented by the scholar 朱善祥 in the Ching Dynasty in the 18th century. One day, when he worked at the province of Yunnan, he was attracted by a local egg delicacy. The scholar loved to eat it so much and described the look of the egg dishes resemble the beautiful lotus flower (芙蓉). When he was back to Zhenjiang, he improvised the dish and eventually popularized in Guangdong. He called it as ‘lotus egg’ (Foo Young means lotus in Chinese), and the name got stuck with it until today.

Go ahead with that gravy. If you are in Asia, chances are you will be served egg foo young without the gravy. Both are equally good

Very insightful! I often make egg foo yung, but did not really think about the differences although I do them when I cook. Your technique with the oil in the wok was really helpful. I have been using too much oil. Next time I make, it will be even better!

I like this recipe and the video. I have made it quite a few times. I like it without the gravy and serve it with a side of rice and top it with a little soy sauce and scallions. It’s delicious. Thank you for the recipe and the video.

Love Egg Foo Young. I have enjoyed it for years but I have never had it with the brown gravy. That is a distinctly American adaptation. It is really only good when not over cooked & still moist & creamy inside. Perhaps that is why the Americans added the gravy to this dish; to ensure that it is moist as many American "Chinese" restaurants over cook the eggs.

I grew up in San Francisco, so I have always offered the brown sauce with my Egg Foo Young. I love this stuff and find it difficult to find in a lot of restaurants now. Isn't it lucky that I learned to cook it when I was a kid? ;) Thanks for the great video.

OH, I do. I've been cooking Chinese food (mostly Cantonese) since I was a kid. Both my parents worked, and I was first home, so I learned to cook dinner. LOL! It sound cruel to make a kid cook for the family, but I turned that into a profession, teaching Chinese cooking at a Community College. Plus I can have this stuff any time I want it.

@@ahmadhasif979 Just the sprouts, cut up a bit so the omelette has some cohesion, green onion, egg beaten with a little soy sauce. Then just a little water or broth, soy sauce and cornstarch for the sauce, seasoned with white pepper. Very simple, light and crunchy. Of course you can add shrimp or tofu, or just about any kind of protein you'd like. We always stuck to the plain as we were usually serving it as one of several courses in a Chinese meal.

Hi Lim, So happy to know that you like it. I was a bit hesitate at first when I uploaded this recipe. I guess most of the Malaysian do not fry eggs with beansprouts and bamboo shoots. But it turns out something different and unique. Give this egg foo young a try. KP Kwan

Cast iron wok is the best for stir-frying. Carbon steel wok is the alternative. Get a good wok so that you do not even need the second one.

Very interesting video. I have one question if I may: I don't succeed to buy a REAL wok (without unstickable products on it) that endure caramelized cooking. What material have I to purchase? Thank you or helping to choose a good one.

I suggest getting a cast iron wok or a steel wok. Both do not have the nonstick layer on it. However, food hardly sticks if you season the wok well.

Tony Wiltshire, I just made this recipe. You flip it just as you would a pancake. It’s very easy to do. After you pour it in the pan, don’t touch it, you can swirl the pan to allow the egg to spread onto the pan. Let it get nice and golden brown before you flip it. Allow the other side to brown and that’s it.

When I order egg foo young, it looks a lot puffier, which I like very much! It's at least an inch or two high. How do I make it puffy at home, as opposed to it being flat like a pancake?

Make sure the oil is very hot before adding the egg will let it puff up more.

Hahaha😆😁😂deep fried chicken and fish & chips absorbs more oil than egg fuyong! Using more oil or even pork lard doesn't make one fat. Its over consumption of carbs and sugar than makes one fat!

Absolutely! But many people still do not accept the rationale that oil does not make them fat. Many self-proclaimed experts still spread that kind of info.

William Quilitzsch the recipe on the website calls for 6 eggs. It makes 3 servings as far as I’m concerned. I use two eggs to make it for just myself. But I think 3 eggs would work for a serving size for you.
