The Chopping Block's Chef/Owner Shelley Young shows how to sauté spinach.
2 Tablespoons Olive Oil
12 oz Baby Spinach
1 clove Garlic, minced
1 small Shallot, minced
Salt & Pepper, to taste
Heat a large skillet over high heat. Add the olive oil and half of the spinach. Push the spinach to the side and add the garlic and shallot. Stir. Add the rest of the spinach and cook for 1-2 minutes, just until wilted. Remove from heat. Season to taste with salt & pepper.

Great idea. We have a RU-vid video for Guacamole, but not Salsa. Thanks for the suggestion!

This looks good . . .it's not what a Czechoslovakian calls Fried Spinach. . . . Take a big bag of OLD spinach,(not baby, not chopped frozen) roughly separate with scizzors a lot of the stems. . Use a half pound of minced bacon fry it, keep the grease, slice a big sweet onion into ribbons, drop it into then hot grease with the stems from the spinach, fry it until the onion is burnt. . . .and the stems give of a powerful odor. . . . Add the spinach leaves a bit at a time, let the water boil off. . . Sprinkle with vinegar . . .NEVER add salt or pepper . . .eat in Pita Bread Pockets. . Also works with Dandelion Greens.

Can you start off by sauteing the shallots and cooking the garlic1st?
@choppingblock
@choppingblock 3 года назад
Garlic takes less time to cook than shallots so you want to add it later.

I appreciate the video, but I thought it was bad to use a non stick pan on high heat? Particles in the surface contaminate the food..?

Not if your non-stick pan is excellent quality.

How do you choose a good quality olive oil
@choppingblock
@choppingblock 4 года назад
Always select extra virgin olive oil. From there, it depends on your budget and preference. Here's a good guide: www.bonappetit.com/story/how-to-buy-olive-oil-beginners-guide

I people like me stop by to see simple "how to saute spinach," you gotta assume we don't know what the heck a "Shallot" is. Please don't make your audience Google it (Yes I had to!)? Thanks for the tips regardless.
