@@daysdissolvetwo The short version is that it came out that the POC (people of color) personalities weren't getting paid as much (or possibly at all) for appearing in their videos after it came out that Adam Rapoport (the former editor in chief of BA) is kinda racist. They did hire some new POC personalities after a lot of the old personalities left due to this stuff going on, but it feels like they're trying to act like the racial stuff never happened. A couple of the videos with the people who stayed on (mostly Brad, Andy, and Chris) kinda touched on it, but they didn't go into any specifics likely due to some non-disclosure agreements or some other legal stuff. I'm sure you could search for a more detailed explanation on what happened, but this is how I saw it go down. Edit: The comeback video remark David made was making fun of the super sterile video introducing the new people, which likely has way more dislikes than likes.

No you can't overcook them (meaning no matter how long you cook them they don't become mushy or rubbery) but you can deffo burn them 😂

The crepe was the original traditional recipe. Gordo uses prosciutto to make it lighter and more intense and everyone generally agrees its a good idea

crepes are meant to work as a moisture barrier to further absorb juices from the shroom duxelle and beef, but for the record a thin layer of phyllo dough works better. also, i recommend cranking up the heat on that initial beef sear, as well as patting the beef dry before seasoning to aid in browning (patting dry reduces moisture on the surface, allowing for more caramelization of the exterior rather than a gray skin). lastly, you gotta make sure your mushrooms are bone dry, and if ur even slightly hesitant that you’ve not yet cooked all the liquid out, cook the mushrooms for longer. overall well done, and i love the knife work on the pastry!

@@daan8695 Adam Rapoport had an image from a while ago come back up in which he was participating in black face. To add to this, I Delaney had a vine of him saying a homophobic slur resurface. On top of this, there had been a underpayment of workers from different cultures within Bon appétit that made a lot of them quite angry (rightfully so). These workers never got the correct pay and weren’t given credit for their work and living in expensive cities did not help at all.

He didn't even have the correct piece of meat. That fat vain is the border of the chateaubriand. It should not be inside of the wellington as it will only produce very wet pastry.

@@tpelych1 yeah can't sear with a non stick if you try it will fuck up the pan because its not suppose to get that hot. gotta use cast iron or stainless steel. I hardly even cook and I even knew that.

So, the liquid overload is likely from a couple of things. 1. The steak wasn't seared enough. You're looking for plenty of brown on the surface but yours still looked a little gray. 2. Your mushrooms weren't reduced enough. They need to be dry enough so that they soak up the steam and juices from the steak. Mushrooms are 92% water so reducing them can take a LONG time. If in doubt, put them in a low oven to gently drive off moisture without burning them in a hot pan. 3. Lack of crepe. The crepe is essentially a porous sponge layer below the pastry which absorbs so much liquid that it basically vanishes in the mouth aside from the flavours of the meat juices and mushroom steam that it has gathered.

The sear on steak has hardly amy impact on moisture. Crepe is not needed if you make the duxelle correctly. Gordon for example doesn't put crepe in his wellington.

I am no pro but I have tried several times to make this and here are some tips: Cook the mushrooms more Let them cool completely before flattening them out into the Prosciutto Sear the meat on a WAAAY hotter pan, you want a nice dark brown crust on the outside. (Fire burner never hurts but it is what it is) The meat will still be raw in the center but it will help with the juice at the end Wrap the meet tight in plastic wrap after it rests to room temp (after you just seared it) and put that in the fridge for 20-30 min before you wrap it in the Prosciutto/mush mix Use an electric thermo while it's in the oven to get the purfect temp Yours was cooked but it was on the extra rare side which leads to more juice Ramsay is a great cook and he has great recipes (for pros and beginners) but there is a lot of stuff he skims over. There are also a lot of things you can do to make up for imperfect ingredients as well as a lack of 30+ years of perfecting the recipe

In the original Wellington recipe a chive and spring onion pancake is used instead of the prosciutto. On a side note, I wonder what would happen if you tried baking the water out of the mushrooms

Gordon does the crepe in his master class recipe. I’ve done it before using his recipe with and without and the crepe really helped make sure the puff pastry is not soggy after cooking. But this version is awesome as well!

Some cooks add a layer of filo dough, or a thin crepe, and wrap the assembled meat, mushroom mixture, and pharma ham (Prosciutto) in that FIRST...THEN wrap it all in the puff pastry. Some people don't like their meat as pink as Gordon's recipe calls for, so they cook the finished product just a tad bit longer (but not to burn the pastry! ) The extra layer of thin filo dough helps to prevent the puff pastry from becoming soggy... especially easy for this to happen to the bottom of the wellington. Also, you can sear (sp?) the beef tenderloin in your skillet for a little longer, before you start the assembly process, if you like for your meat to be more of a medium, as opposed to a medium rare. I'm excited to try and make my first beef wellington this Christmas, so I have watched many tutorials on this! Even the chef at one of Gordon Ramsey's restaurants used this additional layer of filo dough...or actually i think he made a thin crepe...because the "food critic" wanted his cooked to a medium, and wanted very little pink in his. Anyways, your's looked wonderful, and looks as though your first attempt was a success! Wish me luck on mine, as I'll be spending my week's grocery budget on this one meal, lol! Merry Christmas!

just a tip for the future, if you're processing stuff like mushrooms or cauli, do it in batches, that way you can get all of it chopped without worrying about paste at the bottom and whole mushrooms at the top, pulse a good amount at a time and take it out and repeat until it's all processed
