I bought my pressure cooker a couple of weeks ago and followed your recipe on the pork (Boston Butt)...It came out looking like it had been cooked on a grill....The barbecue rub and searing all 6 sides for 3 minutes was the key and glazing the pot with chicken broth....I let it set in the frig for two days with the rub on it, did not mean to, but had no choice and I should have cut it into two pieces as you did....Also cooked for 90 minutes as you recommend and forgot to do the extra 10...It was the best pork we ever had....I have never used a pressure cooker so I really appreciate your help....It surprised my wife how good it was for supper....It broke apart like pulled pork should and now I am ready this week for some BBQ sandwiches....Thanks for the help...I even scored a few brownie points with my wife....I am retired now at 62 and have to do the cooking as she still works partime, so I will be watching your channel faithfully....I also cooked some chicken wings last week and my wife even went back for seconds, that is unheard of, but they were very good and even better the next day....I got the chicken wing recipe from and old freind and I don't think I will change anything on it....Thanks again and God Bless...Just had to let you know how much I appreciate your help....

Got my instant pot as a christmas present from my teenage sons! What, they trying to tell me something?!! Couldn't wait to try your pulled pork recipe. Needless to say, it was a success! So much so, that one of them said it was better than my long-time hit of shawarma chicken wraps! I served it with corn and wheat tortilla wraps with red onion, tomato, chili, cheese, onion relish, salsa and barbecue sauce!! I also saved the stock and made a great pea, lentil and carrot soup with it. Thanks for your enthusiastic video!

To anyone who is reading this, I never usually comment on any video on youtube. But i have to say i tried this recipe for the first time the other day... step by step. And all i have to say is WOW!!!! My whole family absolutely loved the pulled pork and it was also my first time ever using a pressure cooker... Could not recommend a better video and recipe. I've had my pressure cooker XL Pro for about a week now. I don't understand all the negative feedback. (??) I've made pork chops, a breakfast casserole, a pasta dish just to name a few, & they all turned out fantastic.:) Yes, I did have to play with the times a bit, but no big deal. Just a matter of getting to know the cooker. It's summer, & my kitchen has stayed nice & cool all week. :) I wouldn't trade my little toy for anything.

Jason - I used your rub recipe and followed your instructions for pulled pork in my new Instant Pot, it's F A N T A S T I C!! Fall off the bone awesomeness! I made my own tangy sweet BBQ sauce and used it on some sliders (with dill pickle slices). Awesome. BTW - I cut an 8 lb pork butt into quarters and cooked the whole thing making sure it all stayed under the MAX line of the stainless steel pot. Thank you very much for the funny-great video and easy to follow recipe.

+Great Chow I did one other thing I wanted to share. I chilled the left over stock which caused all the fat to separate, solidify, and float to the top. I skimmed all the fat off and was left with an amazing stock. I added my favorite veggies to the pot and some chick peas, pressure cooked it for 20 minutes and did slow release. The soup turned out great - the rich broth with the flavors of your rub turned it into liquid gold. Happy New Year - I really look forward to more great videos from you!

I have watched numerous cooking videos about numerous types of food. Your videos Thomas are by far the best on You Tube. Also I feel more trusting of pressure cookers from viewing your videos. .. I am 70 years old and was taught from an early age to cook by my Mother who was a country cook. She never used a cook book. +Stuart Maxson Hello Stuart, the pulled pork is an excellent choice. Actually, its my favorite! Remember you can also use boneless pork but if you wish. Also since you are used to country cooking you should know the liquid that you use can also be reduced to make a gravy! Hi Oh Great Chow! Just wanted to say thank you so much from the UK for your pulled pork recipe. I only use your method now to make pulled pork in the Instant Pot. Its the only way to do it i believe and i follow your method exactly. Works perfectly everytime! I also make up a regular batch of your amazing rub and keep a labelled jar of it ( Great Chow's Original Pulled Pork Rub) with my other spices, ready for another pulled pork day! My family love it and its down to you. Best wishes for the future, mate!

I can't thank you enough for showing me how to use my insta pot...with trepidation, I made a beef roast. It turned out great....but, I didn't know how to set the time for cooking and the pot automatically went to 35 minutes to cook...I went for it...the recipe said it takes 1 hour to cook, so I just started the pot again....it turned out good but, maybe this 3lb roast cooked too long....Still don't know how to set the cooking time but, as I watch your show, I'll figure it out...Thank you, Thank you. I may get to really like this.

+Arlene Rice Hello Arlene, thank you so much for the message I'm so happy that you were able to see how to use the instant pot from my videos. That's exactly why I put them out there. So if you need to set the time for one hour you need to set the timer for 60 minutes or if the recipe calls for an hour and a half you will go to 90 minutes. You do that by touching the manual setting and using the + to add minutes, and then you could just add the additional minutes to the recipe specification. If you want to see another video where I adjust the time you could take a look at my video called "Huge Cheesy Meatball with tomato basil sauce," and that video is right here on my Great Chow Channel. Just like anything new, there is always a little learning curve and then once you get the hang you will want to pressure cook everything in sight! I had never made a Pulled Pork before until I found this video 2 years ago. My result was amazing and I had to go Old School with brazing on the stovetop plus crock pot cooking. I'm back here today because I want to try one of your other recipes. I usually come back and comment that I've tried a recipe that is posted, so I apologize for the delay. I know there are all kinds of recipes for pulled pork but I was so happy with yours, I've been sticking with it ever since finding it. I'm going to can some in pint jars late this summer so that I can have a quick meal this coming winter. ☺ ty!

I enjoy that rub very much, its a universal rub thats great on all pork (I use it for ribs too) and even sprinkled on some chicken (baked or grilled) comes out great as well. Bought the "Farberware" knock-off version of your digital pressure cooker, watched this video, and went at it. 8.5 lbs @ 2.5 hours and MAN was it magic!! The absolute best pulled pork i could've ever hoped for. It wasn't just close, it was EXACTLY the way I wanted it to be. Thank you so much for making this video, as it was a huge help in tackling a 1st attempt at operating the machine... I subbed and will be watching bro...

Thanks so much for the message : ) I always have great luck with this recipe and I am sure you and your Super Bowl party will enjoy this pulled pork. I wish you the best of luck with your meal : ) As far as the chick peas, just increase the time to 45 min and leave on low for 10, vent then and see if they are cooked. +Robert Leitner Hey Robert! Ok - Vodka Sauce, It was a suggested method in my video, I did not show how to make it, the video was getting long. So you can do 3 things to get vodka sauce: 1. I personally follow this recipe ( and I will post the link on my website: greatchow.wordpress.com ) thegourmandmom.com/2010/06/07/the-worlds-greatest-penne-ala-vodka/2. You can go to a really good Italian Pork Specialty Store or your local Pizzeria and ask for a quart of homemade vodka sauce. Yes they will sell it to you. Could cost 4-8 dollars.3. You can pick up a bottle of it in a grocery store, which is just ok. You will love pressure cooking, especially with the Instant Pot! Its the best! This modern day pressure cooker is super safe you have nothing to worry about! I am so glad you found my channel, happy to have you and I hope you subscribe; I will be coming out with more videos. Just got my Instant Pot, and I'm trying this tonight! I've watched this vid like 10 times trying to prepare lol. It's currently in the Instant Pot now in meat/stew mode. So far, so good, my only problem is that I am using Picnic, and it didn't separate into 4 perfect pieces like yours did.

Great Chow Thanks man, it came out perfectly!!! For anyone out there trying this, it worked for me and I am a total novice. The key is the rub and the searing process. The flavor was perfect and tasted as good if not better than a local BBQ Place. Follow the instructions exactly for best results. I had my tablet in the kitchen and replayed certain important parts as I cooked it.

Hey Thomas, I really want to thank you for all your good information and instructions. And I have to say that you seem like a really fun guy and a guy who just loves making great good food for your close ones. I grew up here in Texas and never cooked a pork shoulder in my life. All steak, ribs, sausage, chicken and burgers... you know? But trips to the Great Smokey Mountains introduced me to pulled port and it was a mystery to me.. lol. You cleared everything up and shared some terrific ideas with everyone. I do use a pressure cooker with great results as well and love the simplicity of it compared to smoking a brisket for 12 hours in my smoker outside.. lol. In all my years I never thought of ripping out some of the dough from an Italian bread loaf to make room for the important good stuff and keeping just the best part of the bread for your sandwich. Great idea. Also on a trip to Puerto Vallarta Mexico a couple of years ago I had a hollowed out Pineapple dish at a great restaurant similar to what you fixed and it was out of this world. Not your recipe but made with grilled chicken, rice and veggies and fresh fruit... mmmmmm good. You're a good man Thomas, loved your stuff.... Thanks Wayne

I really like how you can relate and connect your experiences living in Texas and your travels to my video. For me the message you sent makes all the work making these videos worth it. I really want to put out videos that people connect with, learn from or get some good ideas and have fun while watching. Pulled pork is really a great versatile dish that you can do so many things with, maybe one day you can give this recipe a try. Actually a very popular way of making Pulled Pork is low and slow in a smoker, you can always try that too in your smoker. That's funny you ate out of a pineapple too, that's so great. I love the "out of the ordinary" stuff. That dish you had sounds really good, love that healthy tropical grill type good too. It just has good vibes !!! Glad you like sandwich trick too, by removing some of the dough from the bread you get to load up a little more with the good stuff ! I also do that sometimes when I go out and get a burger and the bun served is huge and doughy. Glad to see you subscribed Wayne ! It would help newbies like me if you mentioned how much liquid you put in and any other hints that might be appropriate. I'm preparing my first meal with the Instant Pot (I've only done a stock).... I'm nervous as, well, you know...thank you. I enjoyed your video.

Hey Mae, when I braise my pork I add enough stock to where 80%-90% of the pork is submerged in the liquid. Don't worry - You've got this ! It's your first meal so you are learning and getting the feel of it. After the time is up allow 10 min on low, vent , take the lid off , remove the pork to a plater/plate and break it up. You can always add some of the juice back to the broken pork to make it juicer, but do that a little at a time. Then you should have your amazing pulled pork! Let me know how it turns out ! So I'm guessing for a 2.5lb I would go with 60 min leave on low for 10; then vent. try to defrost as much as you can before cooking. Also remember that you can always add some of that juice in the pot to the pulled pork. Hope it turns out great! Good luck; Let me know !

I was thinking about trying cherry coke as a acidic agent with either the pork or with ribs. Makes for interesting combination of flavors. As I write this, my pulled pork is in my IP. Soooo excited! Serving as sliders with corn and apple coleslaw

I'm sure there is nothing terribly wrong with a few phosphate salts and a small amount of phosphoric acid which form the basis of cherry coke. I personally would like to stick with something more natural. Like black cherry juice.

Hi Jason! Can you believe a country boy from the hills in VA smoked you out as a New Yorker??!! Well, when I was hired by Allegheny Airlines in 1978 they sent me to Syracuse and I spent a heinous 15 months of my life there because it snowed from September to June and Syracuse people were not the friendliest folk I've ever met!! Also, I used to have a good friend when I lived in Washington, DC and Germantown, Maryland (1982-1988) who grew up in Spring Valley, NY and was Jewish and I learned a lot from him. Oh, I used to make him take the 4 hour drive with me up to Shea Stadium to see a Met's game here and there and then drive back to MD the same day. He wasn't all that thrilled, but I didn't want to see the game by myself!! You're alright, Dude, I am glad to have met you here on the internet and I again Thank You for the GR8 videos!!! -Doug

Great Video. Quick question for you - do you use the braising liquid left over for anything, like a soup base?

+Katie Berinato Hi Katie, great question. I have had reports from people that yes they have used the braising liquid for a soup base. Yes you are able to do that. Also, I have been making a gravy out of it as well. I skim some oil off the top, I take 2 tablespoons corn starch, mix with half cup cold water, pour it into the braising liquid, put the IP on Saute and stir and reduce the liquid until a gravy emerges. /I watched several other videos, with each times being different. I am making pulled pork tonight, should I just do the 90 mins and wish for the best? do you recommend time per pound? cant wait to try it out, with my instant pot

+Anthony Guerra Hi Anthony, if you thing you have about 4-5 pounds , go the 90 min ! I use enough liquid to cover 80-90% of the meat then pressure cook it. I've also seen people shirt the time and they are slicing their pork. 90 min always works for me. --- between you and me, sometimes when I try something new I cross my fingers too and hope for the best ! Sometime things come out better than others. But take an educated guess ; 4-5 lbs 90 min will be perfect. Let me know how it comes out !!!

Question: Are you certain the shoulder rub calls for only 1 tsp of garlic powder? It looks like you're adding at least a Tbsp.

Lynviking Hi Lyn, I noticed the same in the video, wow...your really watching...awesome! I must have made a heaping teaspoon of garlic powder. Yes I do call for a teaspoon. I did use the same teaspoon when filling up the glasses with the seasonings that call for a teaspoon. When I make the videos I try to ensure that I am strictly adhering to the recipe.... Between us, when I make this recipe at home, I usually just "eyeball" (estimate) with the same ingredients and It always seasoned very nicely. The ingredients I show to everyone here is an absolutely safe recipe to go over or under measurement. I would be more concerned if I introduced cayenne (hot pepper) where a tsp or Tbsp can really push peoples heat\spice tolerance. But when it comes to some extra garlic powder i wouldn't worry too much about it, but I may have made a heaping teaspoon of the ingredient. One more tip, If you make this, after you remove the pork and break it up, you can stir up some of that juice in the pot and spoon some of that seasoned juice back into the pulled pork to make it a little juicier (just a tip) : ) yum

Thanks for the great video. If I want to cook half the amount 2-3 pounds, how many minutes? Would it be less than the 90? I've done 2-3 lbs cut into 3 large pieces at 70 minutes, based on some advice. It was okay in the middle but the outside was not as tender. I want to recreate the 10 hours in the slow cooker falling a part tender. I perfected the slow cooker, now trying to perfect the Instant Pot. Any advice is much appreciated.

+wernerrc Hey wernerrc - Sorry for the delay , i just saw your message. At a glance, I would have said 70 min as well. So a couple of things you can do: 1. Increase your time by 10 min to go up to 80 and try again. 2. Keep time on 70 and DO NOT Manually vent, allow for a natural pressure release (this can be an additional 20 on low) then the "Pressure Plunger(its what I call it)" will drop on its own. After the pressure drops; then open and check your food. You are in the right time territory, I think option 2 will serve you best. I want you to be able to recreate the fall apart pork too. Also make sure you have enough liquid covering/submerging about 85-90 percent of the pork. Hope this helps - Let me know : ) Thanks, Jason

Hi, I have been thinking about getting the IP for a little while and checked out the Amazon reviews. Comments about the lack of recipes was a bit of a concern so I checked out RU-vid only to find a lady who cooked the most awful insipid looking pot roast ever!! she was pretending it was falling apart when it was really as tough as old boots. Peoples comments were that it was because she immediately let the steam out and it makes the meat tough, what are your thoughts on this ?Also was the sub you made cold or were the ingredients hot ? I am from England and I've never heard of Vodka sauce is that something you made yourself ?Love the videos by the way

+Liz Hiley Hi Liz, excellent message, thanks you so much. You made me laugh and inspired me at the same time, I just have to make more Instant Pot pressure cooking videos for everyone. I love getting messages from people in different countries, lets me know my audience reach has no limits! I do hope you subscribe : ) Just to let you know, I have really made some delicious meals in the IP, and I personally use it everyday. Anyway, Yes, I am familiar with the exact video you speak of. I would say don't let that video deter you away. Couple of factors there, I do not know what cut of meat that she used ( which is very important - meat to fat ratio - too lean is always tough), how thick and Lbs/kg (exactly it was) so I may adjust my time for a bit longer, added more of a savory braising liquid and depending on what I am making for releasing the steam, In this case I would allow 10-15 min natural release, then vent. Usually when I am doing meats I will allow 10-15 then vent, Like I did in the Pulled Pork Episode, cook for 90 and release after 10. Keep in mind, pressure cooking is a faster gentler way of cooking with liquids and once you have a simple process down, you will understand how to cook and operate; which is what I try to show in my videos (per recipe/episode). This is my first pressure cooker, yup, my first...and I was super nervous using it, and after a couple of times, I want to pressure cook everything in site! ~haha So the sub is a hot sub - The Pork is hot/warm, the sauteed spinach is hot, the Vodka sauce is a hot too. So Vodka sauce is delicious, ( I should post a recipe on my blog ) so I buy it in my Italian Pork store (specialty store, If you have an Italian store you should ask if they have vodka sauce. It is a pink savory sauce, its creamy and is made with tomato, cream, prosciutto, to name a few ingredients. In America they also sell it in jars in the grocery store, but they are just ok. I always use the times in my videos from trial & error and cooking notes that I take. I have seen other videos where people try to rush the time for the sake of saving time and then they are slicing and fighting with their pork when presenting. New subscriber here. Your step by step videos are great, and I'm binge watching this morning. But as I watched, I have a concern about over cooking the meat. There is "fall off the bone tender", and then there is mushy. I think we've all been to a restaurant where the ribs or steak were so soft, it was like chewing porridge. I don't want my pulled pork (or any meat I would cook in my pressure cooker for that matter) to be mushy. But when pressure cooking meat, I think it is a real possibility. Especially for us novices. How do I keep that from happening ?

OK - So none of my meat is mushy , I am not a fan of mushy meat either, I know exactly what you mean. The meat has texture and is still holds its consistency for the pulled pork and the ribs; they are not over done in the videos. Actually they were really delicious batches of food in the videos. I think the times I give are "sweet spot time-tables" and anyone is always welcomed to try different times to experiment to their liking. I just try to provide a really great target time. In the "Fall of the bone" ribs video I used a 3-3.5lb rack. I also know for the pulled pork, people want to try less time and didn't give the pork enough time to break down properly and they have to slice their pork instead if breaking it apart with their forks. So ...How do you keep that from happening? You just start with your first meal, and then see how that turns out and you can adjust accordingly for the next time. When you have your method and time, stick with it and your food will be consistently good. Also as far as seasoning, You are more than welcomed to try anything you like. I have 2 rib videos, the other is Ultimate Ribs right here on my channel were we make a delicious rub, we rub the ribs, pressure cook them, grill them, and we make a sweet and tangy Bbq sauce. The "Fall off the bone" is just a simple method for making ribs. At the end you can always apply a rub, or just brown sugar and bbq sauce, finish in the oven or you can grill them for 5-10 to caramelize. Hope that helps Chris! Thanks for the message and questions.
